Heart healthy Cucumber Avocado Sandwich slathered with an Herb Goat Cheese. It’s a perfect lunch or quick dinner recipe. You’re going to love it!
Ingredients

- 8 pieces of whole wheat/12 grain bread
- 2 avocados, sliced
- 1 medium cucumber, sliced
- 1 container of snow pea sprouts (or any kind of sprout you can find)
Herb Goat Cheese:
- 4 oz. goat cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon dry basil
- 1/4 teaspoon dry oregano
- salt to taste
Instructions
- In a small food processor, add goat cheese, garlic powder, smoked paprika, basil, oregano, and salt. Blend until smooth and creamy. Set aside.
- Toast the bread.
- Add 1 tablespoon of the goat cheese mixture to one slice of bread.
- Then add 3-5 slices of cucumber, half an avocado (sliced), and a handful of sprouts. Put the other slice of bread on top.
- Cut the sandwich in half and serve!
