Today we are going to talk about CHOCOLATE … and my love affair with it.
Aren’t you excited? I know I sure am.
Ever since I was little I was a chocolate lover, it must have been written into my DNA. Chocolate just makes me happy … it is delicious, dreamy and so comforting. There’s a reason girls eat chocolate when they are sad, it makes us feel better. It makes us feel that all is well with the world after one piece of chocolate. {men take note of this!!! aka have some in your man purse}
But, did you know that when you eat chocolate a legitimate chemical exchange happens in your body that really does make you happy! For realz!!!!
There are over 300 natural occurring chemicals in chocolate and when you take a bite, those chemicals release neurotransmitters in your body that give off positive feelings. One of those neurotransmitters actually quickens your pulse, makes you more alert, and gives you a sense of excitement leaving you feeling happy.
So, what does this mean? You now have a medical reason to eat chocolate, it will make you happy! hehe YOUR WELCOME!

Since Valentines Day is coming up next week, I thought I should probably get at least one dessert recipe up for ya’ll. And this Dark Chocolate Chia Pudding is the chosen one! Because … well it freakin’ rocks!
First off, all the ingredients in this recipe are guilt free. It is dairy free, sugar free, and oil free! So what does that leave you with? Chocolate and all natural ingredients!
The Chia Seeds in this pudding act as a natural thickener, so literally all you do is add all the ingredients to a big bowl, stir it, refrigerator it over night and then puree it the next day. Viola pudding.
End Product = Pure Chocolate Bliss!
Top this decadent Dark Chocolate Chia Pudding with whatever you want. I decided to do fresh raspberries, sliced almonds, and dark chocolate shavings {because extra chocolate is always needed}.
It is a no fuss recipe that will make your Valentines Day perfect and leave you “happy” at the end of the night!

Description
This secretly healthy Dark Chocolate Chia Pudding is so, so good. You’ll be surprised what the sweeteners in this pudding are! It’s perfect for a low calorie Valentine’s Day treat.
Ingredients
- 2 cups of full fat coconut milk (use the milk thats in the can, do not use the coconut water portion)
- 1/2 cup of chia seeds
- 1/2 cup of dutch processed cocoa powder
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- 9 whole dates (dried and pitted)
- optional toppings: fresh raspberries, sliced almonds, bananas, strawberries, shaved dark chocolate
Instructions
- In a large bowl, add coconut milk and chia seeds. Whisk until combined.
- Next add the cocoa powder, vanilla extract, ground cinnamon, and whole dates. Mix until slightly combined.
- Cover bowl securely and place in the refrigerator for at least 4 hours. (it is better if you let it sit overnight)
- Remove pudding from refrigerator and spoon into blender. Puree until smooth.
- Top with fresh fruit, almonds, or shaved dark chocolate.
Notes
If your pudding comes out to liquidy you can add more chia seeds to thicken it up, if it is too hard just add more coconut milk or almond milk to thin it out.

Can I use almond milk instead of coconut milk? Coconut is much higher in fat so I was wondering if I can sub out almond milk..

Yes, you can definitely do that.
To get 2 cups of the coconut fat from the can you need 5-6 cans coconut milk it appears. I’d only bought 2, so will need to go back for more, and they aren’t inexpensive. Along with the cost of the dates, chia seeds, dutch processed cocoa, choc chips, etc, one would need a very special occasion for this treat!
Hey Tree. You should be able to get at least 3/4 cup out of each can. If not a full cup. Next time I’d recommend buying coconut cream or placing it the refrigerator beforehand so the cream hardens and doesn’t mix up with the coconut water in the can. I hope you enjoy it!

I’m 4 weeks new to eating clean, fresh and healthy so my husband will love this for a special surprise when we start eating dessert again. Right now we’re trying to get over our ice cream addiction. LOL
Hey Ranee, When you refrigerator the can of coconut milk the water and the cream will separate. The cream comes to the top, that’s the part I want you to use, and the water stays on the bottom, don’t use that part. I hope that makes more sense!
