Guys. It’s almost time. Can you feel it?
The summer sun beating on your back. The stores filling with water guns, sidewalk chalk, beach towels, citronella candles, and everything red, white, and blue. Do you know what I’m talking about? It’s the summer. I think there are officially less than 20 days left of school and then the summer will begin.
Which means late night water gun fights, sitting on the driveway with popsicles melting down your arm, living in swimsuits, and loads of summer grilling parties. Backyard parties were always my favorite growing up.
For one, because that just meant we got to stay up later than normal and play but we also had TONS of food to graze on all day! It was the best. If we hosted, my mom would always make the “main dish” and then everyone else would bring the sides; instead of her having to make all the food! I now understand her genius behind that!
So today is all about a side dish you can bring to those summer parties!
Ok, let’s be honest. What is one of the easiest things to make and something you see the most of on that food table? Any guesses? Answer –> pasta salad But with all the gluten allergies or GF diets out there now, it makes it kinda hard to enjoy our favorite easy summer side dish. What is a girl to do?

Description
Easy Strawberry Avocado Pasta Salad tossed with fresh arugula, bacon, and a balsamic vinaigrette. The perfect summer salad or side dish to bring for all those backyard BBQ parties!
Ingredients
- 8 oz. TruRoots Ancient Grain Elbow Noodle Pasta
- 1 cup fresh arugula
- 1 cup sliced strawberries
- 3 strips of bacon, cooked and crumbled
- 1 avocado, diced
- 1 teaspoons garlic powder
- salt to taste
- Balsamic Dressing:
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoons dijon mustard
- 1 tablespoon honey
- 1 teaspoon dry basil
- salt & pepper to taste
Instructions
- In a small bowl, add balsamic vinegar, olive oil, dijon mustard, honey, dry basil, salt, and pepper to taste. Whisk until mixture to combined and the oil & vinegar no longer separate. Set aside.
- Bring a large pot of water to a boil.
- Add TruRoots pasta to boiling water. Stir and let it cook for 2-3 minutes or until your desired tenderness. Immediately remove from the pot, and drain.
- Add noodle to a large bowl and let cool for 2-3 minutes.
- To the noodle bowl add arugula, strawberries, bacon, and garlic powder. Using a spoon mix all the ingredients together.
- Add in the avocado and drizzle with balsamic dressing. Gently toss everything together so it’s all combined and serve!
