This easy Vegan Grilled Pineapple Dessert screams summer and only has 3 ingredients! Juicy grilled pineapple topped with Coconut Ice Cream and drizzled with salty caramel!Â

- 1 whole pineapple
Instructions
- Preheat grill to medium heat, approximately 375-400°F.
- Lay the whole pineapple on its side. Cut the top leavy part off and the bottom stem part off.
- Place the pineapple upright on your cutting board, so the bottom touches the cutting board. Carefully and slowly, using your knife, slice the rind off the pineapple. Try to get every bit of brown dot you can, without removing too much of the flesh.
- Now place the pineapple on it’s side again. Carefully slice the pineapple into 1/2″ circles.
- Lay the circle flat on the cutting board. Using a pairing knife, cut a circle around the core. Make sure the cuts go all the way through, then pop the circle out.
- Repeat the process with each circle until you have all your ring slices.
- Clean grates with a grill brush and rub grill grates with oil. (coconut or avocado oil)
- Place pineapple slices on grill and cook each side for 2-3 minutes, until you have grill marks and the pineapple is slightly charred.
- Remove from grill and serve.
Optional Dessert:
- Add 2 slices of grilled pineapple, 1 scoop of coconut ice cream and drizzle with caramel. (Optional: garnish with toasted coconut flakes and mint)
