Description

Learning how to cook a whole chicken in the crockpot with smokey seasoning and tart lemons is easy with this set-and-forget recipe.


Ingredients

  • 56 lbs. of whole chicken
  • 2 tablespoons olive oil
  • 1 tablespoon of garlic powder
  • 1 tablespoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • 1/2 tablespoon of smoked paprika
  • 1/2 tablespoon of sea salt
  • 1 teaspoon of ground black pepper
  • 1 lemon, halved

Instructions

  1. Clean and pat dry whole chicken. 
  2. In a small bowl, add garlic powder, cumin, coriander, smoked paprika, salt and pepper. Set aside.
  3. Place chicken, breast-side up in the crock pot.
  4. Drizzle with olive oil. Using your hands, rub the olive oil all over.
  5. Next, cover the chicken with the spice blend. Make sure that it is covered on all sides.
  6. Add lemon halves to the cavity of the chicken.
  7. Cover and cook on HIGH for 6 hours.
  8. Remove the chicken from the crock pot and transfer to a baking dish.
  9. Place the whole chicken under the broiler for 5-6 minutes until the chicken is slightly browned on top.
  10. Remove from oven. Let rest for 5 minutes and serve.
