The Best Summer Dinner Recipe
These Grilled Balsamic Beef Kabobs scream summer to me, which is good because summer is right around the corner. Cason gets out of school in less than a month and then it’s summer break! Wow this school year has gone fast!
I seriously can’t wait though. I’ve missed having my little guy around during the day and this year we’ll have access to a pool (AT OUR HOUSE) all summer long! Which means we’ll be living in swim suits and devouring goods from the grill. Starting with these Beef Kabobs.
I don’t know about you but hamburgers, fish, steaks, light salads, kabobs and pizzas on the grill are a must for us all summer long. I rarely use the stove top. Because we use all of the same proteins in the summer, I try to change up the flavors by utilizing unique condiments or toppings.
Best Homemade Kabob Marinade
Beef Kabobs on their own are delicious but if you amp them up with a sauce they become irresistible! Now, i know that it sounds like a lot but I marinade the meat in half of the sauce and then reserve the rest to glaze the kabobs with while they are cooking on the grill. HECK YES!

Description
This juicy, grilled kabobs recipe with sweet-and-savory balsamic marinade and fresh, crunchy veggies is an easy summer lunch.
Ingredients
Balsamic Beef:
- 2lbs top sirloin, cut into 1” cubes
- 1/2 cup Balsamic Vinegar
- 1/3 cup olive oil
- 1 tablespoon dijon mustard
- 1 tablespoon dry rosemary or 2 tablespoons fresh rosemary
- 1 garlic clove, minced
- 1 tablespoon of honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Kabobs Ingredients:
- 2 yellow peppers, cubed
- 2 green peppers, cubed
- 1 red onion, cubed
- 1 pint of cherry tomatoes
- 1 cup whole baby bella mushrooms
Instructions
- In a large bowl, mix balsamic vinegar, olive, mustard, rosemary, garlic, honey, salt and pepper. Whisk until everything is combined. Reserve 1/3 cup of marinade and set aside.
- Add cut beef to a bowl. Pour the marinade on top. Toss to coat the beef. Cover and place in the refrigerator and marinate for 30 minutes to 1 hour.
- Assemble kabobs: alternate yellow pepper, green pepper, red onion, meat, cherry tomatoes and mushrooms. Repeat. (I try to get 3-4 pieces of meat per skewer) Continue process until ingredients are gone.
- Heat grill to medium high heat, about 375-400°F.
- Make sure that grill grates are clean. Spray grill grates with cooking spray or rub down with an olive oil soaked rag.
- Place steak kabobs directly on the grill. Grill each side for 3-4 minutes, you want a nice char. Remove the kabobs from grill and let rest for 5 minutes.
- Serve with reserved 1/3 cup marinade.

Hey Sarah, you didn’t miss it. I actually updated the recipe to make it better and omitted the ketchup. But if you wanted to still add it, you would add it to the marinade part. Hope you enjoy it!

What can I use as a substitute for the specialty ketchup…I can’t find it where I am. Would normal ketchup with some Italian seasoning work?

You could sub it with regular ketchup and italian seasonings but it would have the sundried tomato taste.
