Grilled Shrimp Salad with Honey Lime Vinaigrette
I cannot believe that it is almost September, that is craziness! Where did the first half of the year go?
With fall right around the corner, that means grilling season is coming to a close for most of you. {in the northern states that is} So I thought I would throw in a couple more grilling recipes while you can still do it! 🙂 {so thoughtful I know.. hehe} This one was inspired because, well, shrimp was on sale last week. But, Mike and I are also big fans of grilled shrimp.
What Type Of Marinade Is Used For These Grilled Shrimp?
I normally marinade it in a white wine garlic herb mixture, but this time I was feeling a southwestern inspired marinade. So I ended up going with a Chipotle Lime Marinade, then turned it into a shrimp salad and added some tex-mex veggies along with a Honey Lime Vinaigrette. All I have to say is, it’s perfection in one bite and super easy to make!

How To Make This Easy Grilled Shrimp Salad
To get started of this Grilled Shrimp Salad, zest 1 lime {about 1 teaspoon of zest}, mince 1 chipotle pepper in adobe sauce, and 1 garlic clove. Add to a medium sized bowl.
Next add 2 Tablespoons of fresh lime juice, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Whisk to combine.
Whisk in 4 Tablespoons of olive oil. Add in 16 oz. of deveined deshelled raw medium shrimp. Toss to coat shrimp with marinade.
How To Grill Shrimp
Let shrimp marinade for 30 minutes. Heat grill to medium high heat. Place shrimp in a grill basket and grill for 3-4 minutes or until shrimp is pink. {if you don’t have a grill basket, put the shrimp on skewers and grill} Remove from grill, and set aside.
In the meantime, make the Honey Lime Vinaigrette. {for recipe click here}
Drain 1 15 oz. can of sweet corn {no salt or sugar added}, drain and rinse 1 15oz. can of low sodium black beans, cut 1 tomato into 8 wedges, and julienne 1 roasted red pepper. {to roast, grill red pepper until all sided are blackened, about 7-8 minutes, remove skin and cut}
In a large bowl, place 8 oz. of fresh spring mix {a salad mix in the grocery store}, grilled shrimp, and prepared vegetables. Serve with dressing on the side.

Description
This chipotle grilled shrimp salad recipe with Tex-Mex flair and homemade lime-honey dressing is an easy weeknight dinner.
Ingredients
Grilled Shrimp:
- 1 lb. of raw large shrimp, deveined and shells removed
- 1 teaspoon of fresh lime zest
- 1 chipotle pepper in adobe sauce, minced
- 1 garlic clove, minced
- 2 tablespoons of fresh lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 tablespoons of olive oil
Honey Lime Vinaigrette:
- 1 1/2 Tablespoons of lime zest
- 2 garlic cloves, minced
- 1 1/2 Tablespoons of honey
- 2 Tablespoons of fresh cilantro, chopped
- 1/2 teaspoon red pepper flakes
- 1/4 cup of lime juice
- 1/2 cup of olive oil
- salt & pepper
Salad:
- 6 cups chopped green leaf lettuce
- 1 roasted red pepper, diced
- 2 ears of corn, shucked
- 1 15oz. can of low sodium black beans, drained and rinsed
- 1/3 cup red onion, sliced
- 1 avocado, sliced
- 3/4 cup halved cherry tomatoes
Instructions
- Make Vinaigrette: Add lime zest, garlic cloves, honey, fresh cilantro, red pepper flakes, lime juice, olive oil, and salt & pepper to a bowl. Whisk together all ingredients until emulsified and combined. Set aside.
- Make the Marinade: In a medium sized bowl, mix lime zest, chipotle pepper in adobe sauce, garlic clove, fresh lime juice, salt, pepper, and olive oil. Whisk to combine. Add in prepared shrimp and toss to coat the shrimp with marinade.
- Let shrimp marinade for 30 minutes.
- Heat the grill to medium-high heat. Place shrimp in a grill basket or on skewers and grill for 3-4 minutes or until shrimp is pink. Add corn to the grill, and grill for 2-3 minutes per side or until slightly charred.
- Remove from grill, and set aside.
- Slice corn off the cob.
- Assemble the Salad: Add green leaf lettuce, roasted red pepper, corn, black beans, red onion, avocado and grilled shrimp. Drizzle with dressing or serve on the side.
