Enjoy your favorite fall dessert in the form of a healthy breakfast with these easy Pumpkin Pie Parfaits! Homemade pumpkin pie yogurt is layered between a crunchy 5-ingredient granola made with chopped nuts, coconut and cinnamon.

For the Spiced Pumpkin Yogurt
- 1 1/2 cup plain greek yogurt
- 1/2 cup pumpkin puree
- 2 tablespoon honey
- 1/2 teaspoon pumpkin spice
For the Coconut Granola
- 1/4 cup raw whole almonds
- 1/4 cup raw walnuts
- 1/4 cup raw pecans
- 1/4 cup unsweetened shredded coconut
- 1/4 teaspoon ground cinnamon
Instructions
- To a medium bowl add yogurt, pumpkin puree, honey and pumpkin spice seasoning. Mix together. Set aside.
- Add almond, walnuts and pecans to a food processor. Blend until roughly chopped. Pour into a small bowl and add shredded coconut and cinnamon. Stir together.
- Add a scoop of granola to a jar or glass, followed by 3/4 cup of the pumpkin spice yogurt and another scoop of granola. Repeat with remaining jars, then distribute leftover granola equally among each one. Top with pomegranate arils and additional granishes, if desired.
Notes
Optional garnishes include pomegranate arils, fresh cranberry, dried fig, etc.
