Baked Caprese Tomatoes are an easy Italian appetizer that everybody loves! They’re quick & simple to prepare and they look so classy! You can serve them as a topping for toast, too.
Easy Baked Caprese Tomatoes
Its funny how when you become a parent “date night” turns into “errand night”. Last night, since my parents were in town, Mike and I took advantage and had ourselves a little date night. However, this is not your “run of the mill” dinner and a movie date night. Tomorrow is my son’s 1st birthday and his 1st birthday PARTY, so guess who has ALOT of work, cooking, and cleaning to do … this girl right here (raising my hand.) We also still had not purchased his birthday present yet, so Mike thought we could go to Toys’R’Us and look around. (very romantic I know) Then I threw in sheepishly. “Well… If we could stop at Walmart too I could get all my food shopping done as well”
So for date night, Mike and I had a romantic evening looking at mini playground sets and Leap Frog Alphabet games at Toys’R’Us and then moved onto a stroll through Walmart. (FYI- there really are “interesting” people at Walmart around 9pm or as my dad likes to call them “Walmartians”)

While we are on the “party” topic, I know when you throw a party you want all the help you can get. (or at least I do) And who better to help than your husband, right?! So, today’s helping hubbie post is an Appetizer that your hubbie can make the day of your party. It is Baked Caprese Tomatoes! They are super easy, only have 5 ingredients, and are delicious! What’s not to love?
How to Make Baked Caprese Tomatoes
To get started, preheat oven to 450. Slice 5 tomatoes in 1/4″ slices and place on baking sheet.
Place 1 slice of fresh mozzarella on each slice of tomato.
Season with olive oil, salt, and pepper.
Place 1 basil leaf on each tomato mozzarella slice.
Place in oven and bake for 8-10 minutes. (or until cheese is melted and slightly browned)
Serve them up and scarf down! 🙂

This baked tomatoes recipe with melty mozzarella, parmesan, and herby basil is an easy 15-minute appetizer packed with fresh Italian flavors.
Ingredients
- 5 tomatoes, 1/4″ slices (on-the-vine kind or beef steak)
- 1/2 cup grated parmesan cheese
- 8 oz. fresh mozzarella, sliced
- 1 tablespoon olive oil
- 1/2 cup fresh basil, chopped
- salt & pepper
Instructions
- Preheat oven to 400°F.
- Slice your tomatoes in 1/4″ slices and place on parchment paper-lined baking sheet.
- Sprinkle each tomato with parmesan cheese and top with a slice of mozzarella. Then drizzle with olive oil and season with salt and pepper.
- Bake for 8-10 minutes, until cheese is melted.
- Remove from oven and turn on the broiler. Place tomatoes back in the oven and broil until cheese is slightly browned, about 2-3 minutes.
- Remove from oven and top with basil. Serve.
