Description
This Homemade Almond Joy Granola is made in just 30 minutes! This stuff is like candy – it’s so addicting, you’ll want to eat it every morning for breakfast!
Ingredients

- 2 cups of old fashioned oats (not quick oats)
- 1/2 cup of sliced almonds
- 2 tablespoons of brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon of salt
- 4 tablespoons of coconut oil, melted (or butter)
- 1/2 cup of pure maple syrup
- 1 1/2 teaspoon of vanilla extract
- 1/3 cup of unsweetened coconut flakes
- 1/2 cup of dark chocolate chunks (or chocolate chips)
Instructions
- To get started, preheat over to 325º.
- In a large bowl, toss old fashioned oats, sliced almonds, brown sugar, ground cinnamon, ground nutmeg, and salt. Set aside.
- In a small bowl, mix the wet ingredients, melted coconut oil {or butter}, pure maple syrup, and vanilla extract. Whisk until combined.
- Pour wet mixture over dry mixture and toss to coat everything.
- On a baking sheet, place either a silicon baking mat or parchment paper. Then spread granola mixture out across entire pan.
- Bake for 30 minutes or until granola is slightly browned. {I did 30 minutes and it was perfect} You will want to turn the granola every 10 minutes so it doesn’t burn. 🙂
- Remove from oven and let cool.
- Mix in the coconut flakes and chocolate chunks when the granola has completely cooled.
