These Honey Glazed Carrots are sweet, savory and roasted to perfection in the oven. It’s a great family-friendly (and healthy!) side dish.

The Best Honey Glazed Carrots
Ok, so if you’ve been coming here for recipes for a while you know that I am absolutely in love with roasted vegetables. Mustard Balsamic Chicken with Roasted Vegetables, Roasted Tomato Caprese Pasta, Roasted Sweet Potato & Butternut Squash Hash, and Roasted Red Pepper Hummus are just a few of my favorites! These Honey Glazed Carrots are right up there, too.
When you toss the carrots with honey and roast them in the oven they turn into sweet caramelized goodness! And who doesn’t want to eat that?! It’s a tasty and healthy way to enjoy vegetables.
Plus, it’s kid-friendly. My kids eat these right up whenever I make them! There’s no complaining and they are enjoying healthy, fiber-filled food!
Are Glazed Carrots the Same as Candied Carrots?
You might be wondering if these glazed carrots are the same as candied carrots (a.k.a. caramelized carrots). In a way, yes they are a little similar. All of the recipes use a sweetener for flavor and to showcase the natural flavor of the carrots. But this Honey Glazed Carrot recipe is a bit different. Here’s why:
- Honey Glazed Carrots are Paleo-friendly. This is because a natural sweetener (honey) is used and not granulated or brown sugar. Usually, to make candied carrots you use regular sugar or brown sugar.
- Candied Carrots are typically boiled and not roasted. This recipe calls for roasting the carrots, which also brings out the natural sweetness of the root vegetable. (And allows you to use less sweetener to keep it healthy.)
Recipe Ingredients
Listed below are the ingredients that you need to make Honey Glazed Carrots. Fortunately, most of the ingredients are probably already in your kitchen!
- Carrots: You can use any carrots that you’d like! I love using fresh organic carrots right after their harvesting season. But you could also use baby carrots or even tri-colored carrots.
- Olive Oil: Avocado or sunflower oil could also be used.
- Raw Honey: Honey is the key ingredient to get the caramelized flavor. You could also use maple syrup and it will still be paleo-friendly.
- Fresh Thyme: I love the way that thyme and carrots pair together! Plus, you could also try some other heartier herbs like sage or rosemary. Try to use fresh herbs for the best flavor.
- Garlic: Garlic is another ingredient that thrives when it’s caramelized and has a little sweetness. The garlic adds a burst of flavor but it’s not bitter at all. Honestly, add more garlic if you love the flavor! There’s no harm there at all.
- Salt and Pepper
- Fresh Parsley (Optional Garnish): You could also use fresh chives as a garnish, too.
How to Make Honey Glazed Carrots
Here’s how to make this delicious carrot side dish. It’s just a few steps and then they go right in the oven!
- To get started, preheat the oven to 400F. Then Peel 2 lbs. of carrots and cut off the stems. Next, cut the carrots into 1 1/2″ chunks.
- Now you can make the honey glaze. Pour the olive oil, honey, garlic, salt and pepper into a bowl and mix together.
- Toss the carrots with the honey glaze. Make sure that the carrots are evenly coated!
- Spread carrots out on a baking sheet. It’s important to be sure they are in a single layer and not stacked on each other.
- Lastly, bake for 30 minutes. Remove the carrots from the oven and let them cool for a few minutes before serving. Garnish with the fresh chopped parsley if you’d like.
Tips for Success
This recipe is very straightforward, which is why it’s such a hit around here! Here are a few simple tips to keep in mind so that you’re successful in the kitchen.
- Cut the carrots to be the same size. This will ensure that they cook evenly and require the same amount of time.
- Make sure the honey is liquified. Sometimes honey can become hard or crystalize in the bottle. To fix this you can run it under some hot water to make sure that it’s nice and smooth for making the honey glaze.
- Always lay the carrots flat on the tray and do not stack them. The carrots will not roast evenly if they are stacked on top of one another.

Can You Make Glazed Carrots Ahead of Time?
Yes, you can certainly make these carrots ahead of time. While the best flavor is going to be fresh out of the oven, there is no harm in reheating them.
Simply store the cooked carrots in an airtight container in the fridge. Then I suggest reheating in a large skillet with a little bit of butter or oil. If you reheat them in the oven the carrots run the risk of burning or drying out.
How to Store & Reheat
As mentioned above, it’s best to store any leftovers in an airtight container in the fridge. The dish will stay fresh in the fridge for up to 5 days.
Then when you’re ready to reheat, you can do so on the stovetop for the best results.

Ingredients
- 2 lbs. of carrots, peeled and cut into 1–1.5” sticks
- 2 tablespoons of olive oil
- 1/4 cup raw honey
- 1 teaspoon fresh thyme
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Optional: flat leaf parsley for garnish
Instructions
- Preheat oven to 425ºF.
- Make glaze: To a small bowl add honey, olive oil, garlic, thyme, salt and pepper. Mix together until well combined.
- To a medium bowl add carrots. Pour honey mixture over carrots and toss to coat.
- Line a baking sheet with parchment paper. Spread carrots out on a baking sheet in a single layer.
- Bake for 20-25 minutes, tossing halfway through. Remove carrots when they are tender and slightly caramelized.
- Serve. Optional: garnish with freshly chopped flat leaf parsley
