I don’t know why it’s taken me so long to do this, but for whatever reason it has.
I’ve had tupperware in our cabinet that’s plastic and covered in stains from the different kinds of sauces or foods that we’ve kept in them. Mix matched tops or no tops at all and somehow they still keep on disappearing, never coming back to our house again. It’s almost like they are running away from our house. Does anyone else have this problem?
My husband has been asking me … no BEGGING me for months to buy new tupperware. Basically giving me the go ahead to go out and buy whatever. To spend money. But I still kept delaying.
Well, finally I bought new tupperware and guys I’m officially in love! Not only are these Pyrex containers glass, but they are super sleek and are perfect for stacking in the refrigerator without taking up too much space. Guys, I have space in my frig again!!! No more coming home from the grocery store trying to figure out where I’m going to fit everything or just shoving it in hoping it won’t fall over.
But my favorite part about my new tupperware addition is how easy it is for me to meal prep now. I have 6 containers that are all the same size and perfect for portioning meals out.
Why did I wait so stinking long to do this? It’s amazing!
AND now I get to partake in the whole “meal prep” trend thing going on right now. Woohoo! I like to fit in, but usually I’m behind the game on trendy stuff. Like almost a whole season behind. But you know what, it’s ok. I’m ok with it. It just means that maybe you forgot about it and I get to bring the trend back? Right!
Anywho, right now anything that I can do to make life and cooking easier I’m all about. I’m 4 weeks out from baby girl coming! Can you believe it!? Plus I think these meal prep meals are going to be my saving grace once she does come!
How to Make This Thai Chicken Grain Bowl Recipe
Today’s recipe is a Thai Chicken Grain Bowl topped with an easy homemade Peanut Dressing. I’m all about Thai flavors and definitely any and everything with peanut butter in it! This bowl is filled with fresh veggies, brown rice and then rotisserie chicken. Which means you don’t even need to touch the stove!
Pretty much, no excuse to NOT make this one.
I packed the grain bowls with all the main components and left the dressing in another container to take out and drizzle on top when I was ready to eat it. Y’all. So flippin good!
Everything in this bowl tastes fresh and natural. I guarantee you’ll love it and it might even become a new staple meal or lunch in your home.
Even Cason was devouring this bowl. Although, he did give the snap peas a stink eye and said… “mommy I don’t like those.” To which I responded, “you don’t know what they are and you’ve never even tried them buddy.” So I dunked one in the peanut dressing and he was hooked. Now he even eats them raw and asks for them in his lunch! #momwin

Description
Easy Thai Chicken Grain Bowl drizzled with a Creamy Peanut Dressing. These Grain Bowls are filled with veggies, thai flavors, 17 grams of protein and come together in 15 minutes.
Ingredients
- 2 cups cooked brown rice
- 2 cups diced rotisserie chicken (I used all white meat)
- 1 cup julienned carrots
- 1 cup julienned red pepper
- 1 cup sliced cucumbers
- 1 cup sliced purple cabbage
- 16 snap peas
- garnish: fresh cilantro and sliced green onions
Peanut Dressing:
- 1/4 cup creamy peanut butter
- 2 tablespoons sesame oil
- 2 tablespoons rice wine vinegar
- 1 tablespoon tamari sauce
- 1 teaspoon dry cilantro
- juice of 1 lime (about 1 1/2 tablespoons)
- 1 garlic clove, minced
- 1 teaspoon fresh ginger, minced
- 1 teaspoon sriracha sauce
- 2 tablespoons warm water
- optional: 1 tablespoon of honey if you like it sweeter
Instructions
- In small bowl add: peanut butter, sesame oil, rice wine vinegar, tamari sauce, dry cilantro, fresh lime juice, garlic clove, ginger, sriracha sauce and water. Using a whisk stir everything together until it’s combined and smooth. Set aside.
- In meal prep containers divide out food: 1/2 cup brown rice, 1/2 cup rotisserie chicken, 1/4 cup of each veggie, and 4 snap peas. Garnish with fresh cilantro and green onions.
- Cover and serve when ready with a drizzle of peanut dressing.
