Mediterranean Chicken Flatbread with Avocado Tzatziki Sauce
Ok, I have to start out by saying. If you live where there is still snow I’m sorry, please don’t hate me. Right now it is in the 70’s so hey … this girl has to grill.
This dish was inspired by some sweet friends of ours, Jonathan & Desiree. {yeah I know.. I love her name too!} I first met them when I was working at our church in the Community Life Ministry. Jonathan and Desiree were small group leaders and seriously the most awesome people you will ever meet. After I resigned we still kept in contact with them and they invited us over one day.
Desiree created this amazing meal with a Greek/Mediterranean theme, baked feta cheese for an appetizer, greek seasoned chicken & steak kabobs, fresh made hummus, with warm flatbread. The other day I was thinking about that amazing meal and created this Mediterranean Chicken Flatbread with Avocado Tzatziki Sauce. Yup, you read that right. AVOCADO tzatziki sauce, and believe me this sauce is da bomb.com.
The flavors of this will totally take you to the Mediterranean in a heartbeat. The smokey grill taste from the Chicken & Vegetable Skewers works perfectly with the toasted warm flatbread and that sauce… oh that sauce… will just make you want more and more! If you are on a gluten-free or paleo diet all you need to do to make this dish work for you is omit the flatbread and your good to go. You won’t even miss it, just make double sauce to make up for the missing bread. {can you tell I really like this sauce yet!! haha} Go make it…. NOW! It will change your life… no… YOUR WORLD!
How to Make This Fabulous Flatbread
To get started, soak 12 wooden skewers in cold water for 20 minutes. {this prevents the wood from burning once on grill.) Add 1 lb. of cubed boneless chicken breast to a bowl.
To the chicken bowl add juice from 1 lemon, 1 teaspoon of dry oregano, 1 tablespoon of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Toss to coat chicken.
Prep all your veggies, cut 2 red peppers into 1″ cubes, 1 yellow pepper in 1″ cubes, 1 large zucchini into 1/2″ slices, and 1 red onion in 1″ cubes. Set aside. On wooden skewers alternate chicken with vegetables. Preheat grill to medium high heat.
In the meantime, make Paleo Avocado Tzatziki – recipe HERE. Add Chicken & Vegetable Skewers to the grill. Grill each side for 4-5 minutes. Remove from grill.
Next add 5 whole wheat flatbreads to grill. Grill each side for 2-3 minutes, your just looking for the flatbreads to get warmed up and for slight grill marks. Remove from grill.
To assemble, place flatbread on plate add 1 skewer of the chicken & vegetable combo and top with Paleo Avocado Tzatziki. {to make this meal completely Paleo and Gluten free omit the flatbread}
