Mediterranean Chicken Kabobs

Ready in less than an hour, these Mediterranean Chicken Kabobs are all about the beautiful summer veggies and juicy chicken in each bite. Made with Mediterranean-inspired ingredients like red peppers and zucchini, these simple skewers will take you on a flavorful ride through Europe.

Lightly charred and smokey from being fresh off the grill, it’s the kind of cookout recipe you can just as easily take indoors for a quick weekday lunch. Ultra colorful and light, they’ll brighten up any plate and palate— especially with a drizzle of lemon juice.

What You’ll Need

From the marinade to the chicken, to the sauce, every bite is packed with Mediterranean flavors. Check the recipe card at the bottom of the post for full ingredient amounts.

Marinade Ingredients

  • Lemon juice – You can use half the amount of lime juice.
  • Olive oil – Avocado oil is a good swap.
  • Dijon mustard – No regular mustard here, please.
  • Raw honey – Don’t use maple or agave syrup.
  • Dried oregano
  • Dried parsley
  • Garlic powder
  • Salt and pepper

Kabob Ingredients

  • Chicken breast – Feel free to use boneless, skinless chicken thighs instead.
  • Zucchini
  • Red onion – You can also use white onion.
  • Red pepper – Any color of bell pepper works.
  • Orange pepper

Sauce Ingredients

  • Plain Greek yogurt – Any plain unsweetened yogurt is great for this.
  • Cucumber
  • Lemon juice
  • Dry dill
  • Garlic powder
  • Salt

How to Make Mediterranean Chicken Kabobs

All you have to do is whisk the marinade and then grill the kabobs. It’s easy!

To Marinate the Chicken

  • Make the marinade. Add the lemon juice, olive oil, dijon mustard, honey, dried oregano, dried parsley, garlic powder, salt, and pepper to a bowl. Whisk until well combined. You can also pour the ingredients straight into the bag, seal it, and shake well.
  • Marinate it. Place the chicken inside the bowl (or bag) and stir to combine. Refrigerate it and let it marinate for 30 minutes.

For the Tzatziki Sauce

  • Mix it. Add the yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt to a bowl. Mix well and refrigerate it until ready to use.

To Make the Kabobs

  • Skewer them. Heat the grill to 350F and clean the grill grates. Grab the skewers and alternate the veggies and chicken on each one until all of the ingredients are used up.
  • Cook them. Grill the kabobs for 3-4 minutes on each side, or until lightly charred. Remove them from the grill and let them rest for 2-4 minutes. Serve with tzatziki sauce.

Tips for Success

Your Mediterranean chicken kabobs have never turned out better. All you need to do is learn the key to making a juicy chicken.

  • Use leftover veggies. Don’t be afraid to switch it up with the veggies and use whichever you’ve got on hand. Leftover carrots, roasted potatoes, and mushrooms are great swaps.
  • Use a grill thermometer. If you’re not sure your grill is at the right temperature, it’s best to use a grill thermometer. Getting it hot enough is the key to quickly cooking the chicken without drying it out.
  • Use metal skewers. There are wood and metal skewers. If possible, get the metal ones. They’re safer because they don’t burn and are reusable, unlike wooden ones.
  • Let it marinate. Time is your best friend when it comes to marinades. Letting the chicken absorb the marinade for 1-4 hours will give the meat more flavor.

What to Serve With Mediterranean Chicken Skewers

With a bit of lemon juice, these skewers are practically a salad and a main all in one. However, you can definitely spruce up the meal by adding lots of veggie sides, pasta, or soup. Pair them with my Air Fryer Asparagus, Corn on the Cob, or Garlic Parmesan Brussel Sprouts. For pasta, I love these with my Mediterranean Orzo Pasta Salad or Greek Tortellini Pasta Salad.

How to Store & Reheat Leftovers

Once fully cooled, refrigerate these Mediterranean chicken kabobs in an airtight container for up to 3 days. You need to remove them from the skewers, though. Reheat them in the microwave for up to a minute or until warm. You can also heat them in a pan over medium-low heat for 6-7 minutes.

Ingredients

Mediterranean Marinade:

  • 2 tablespoons lemon juice
  • 2 tablespoon olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Kabobs:

  • 1.5 pounds of chicken breast, cubed
  • 2 zucchini, sliced
  • 1 large red onion, cubed
  • 2 red pepper, cubed
  • 1 orange pepper, cubed

Tzatziki Sauce:

  • ½ cup plain greek yogurt
  • ¼ cup grated cucumber, liquid squeezed out
  • 1 tablespoon lemon juice
  • ½ teaspoon dry dill
  • ½ teaspoon garlic powder
  • salt to taste

Instructions

Mediterranean Chicken:

  1. To a small bowl, add lemon juice, olive oil, dijon mustard, honey, dried oregano, dried parsley, garlic powder, salt and pepper. Whisk together.
  2. Add chicken cubes to the marinade, toss to coat and let sit for 30 minutes.

Make Tzatziki Sauce:

  1. To a bowl, add yogurt, grated cucumber, lemon juice, dill, garlic powder and salt. Using a spoon, mix everything together and set aside.

Prepare Chicken Kabobs:

  1. Heat grill to 350°F and clean grill grates.
  2. Alternate vegetables with chicken on a skewer until everything is used up.
  3. Place kabobs on the grill and grill each side for 3-4 minutes, until charred. 
  4. Remove from grill and let rest for 2-3 minutes. Serve with tzatziki sauce.
