Lightly charred and colorful, these Mediterranean Chicken Kabobs are layered with marinated chicken and fresh vegetables. It will become your go-to recipe this summer, served with homemade tzatziki for the perfect bite and come together in less than an hour.

Mediterranean Marinade:
- 2 tablespoons lemon juice
- 2 tablespoon olive oil
- 1 teaspoon dijon mustard
- 1 teaspoon honey
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Kabobs:
- 1.5 pounds of chicken breast, cubed
- 2 zucchini, sliced
- 1 large red onion, cubed
- 2 red pepper, cubed
- 1 orange pepper, cubed
Tzatziki Sauce:
- ½ cup plain greek yogurt
- ¼ cup grated cucumber, liquid squeezed out
- 1 tablespoon lemon juice
- ½ teaspoon dry dill
- ½ teaspoon garlic powder
- salt to taste
Instructions
Mediterranean Chicken:
- To a small bowl, add lemon juice, olive oil, dijon mustard, honey, dried oregano, dried parsley, garlic powder, salt and pepper. Whisk together.
- Add chicken cubes to the marinade, toss to coat and let sit for 30 minutes.
Make Tzatziki Sauce:
- To a bowl, add yogurt, grated cucumber, lemon juice, dill, garlic powder and salt. Using a spoon, mix everything together and set aside.
Prepare Chicken Kabobs:
- Heat grill to 350°F and clean grill grates.
- Alternate vegetables with chicken on a skewer until everything is used up.
- Place kabobs on the grill and grill each side for 3-4 minutes, until charred.Â
- Remove from grill and let rest for 2-3 minutes. Serve with tzatziki sauce.
