Is anyone else sad that the Olympics are ending soon!? I have loved just having it on in the background and watching sports that I normally don’t watch.
Things like Downhill Biking, Kayaking, Track & Field, even Ping Pong (which is quite entertaining if for no other reason that it’s ping pong)
But hands down my favorite sports to watch are BEACH VOLLEYBALL … no surprise there.
Swimming and Women’s Gymnastics… and ahem.. can I just say that Simone Biles has her gym like 10 minutes from my house! Who knows I may spot her at our local grocery store!! Don’t worry, if I see her I’ll ask to take a picture and post it on Instagram. 🙂
Today I got sucked into watching the Quarter Finals Men’s Beach Volleyball Match against Brazil. They sucked it up the first game, got their act together in the second game but in the tie breaker they had a heart breaking loss. So bummed because they were the Men’s team to win it for the US if we did win it.
My hope is still up for the Women’s Beach Team .. cuz duh … Kerri Walsh is on it. I loved when her and Misty May were together because Misty was a setter and basically my idol because I also was a setter.
I can remember my freshman year of high school, my Varsity Coach taking me to the Wisconsin Badgers Volleyball game when they played Long Beach State just so I could watch, analyze and then emulate her setting style.
I will say watching all this Volleyball has made me miss playing AND makes me want to get into Beach Volleyball. How awesome would it be to play Amateur for a little bit! Eeekkk!
Ok, focus. Back to the Olympics…..
Since the Olympics are in Rio, Brazil and I haven’t done ONE recipe in honor of the Olympics yet. I thought now was the time!
Caipirinha’s are a Brazilian cocktail that are made with fresh lime, sugar and a liquor called Cachaca which is a distilled liquor that is made out of sugar cane juice. It’s delicious and one of my favorite drinks to order when we are on vacation. To me it kinda tastes like a Mojito but without the mint!
This Peach Caipirinha is refreshing, light to drink, easy to make and goes down like water … which could be a good or bad thing depending on the person. hehe
Either way you need to have it in hand while you’re watching the Olympics … and then do a little Samba Dance to really get the full feel of Brazil.

Description
Brazilians certainly know how to make a cocktail! Perfectly refreshing and easy to make, this Peach Caipirinha is my drink of choice every time.
Ingredients
- 1/4 cup diced peaches
- 3/4 oz of fresh lime juice
- 2 teaspoons of sugar
- 2 1/2 oz. cachaca
- 4 lime wedges
- splash of club soda
Instructions
- To a shaker (or a cup if you don’t have a cocktail shaker) add peaches, sugar, and lime juice.
- Using a muddler or wooden spoon, muddle or smash the peaches just slightly. (about 30 seconds)
- Add lime wedges, crushed ice, cachaca, and a splash of club soda.
- Stir and serve
