Yup, I’m pretty sure that’s all I needed to say to get you to make these low carb burgers! And when I say, low carb I mean LOW CARB. There are only 2 grams per burger! Not that that is important. Really what matters is the flavor, let’s be honest. And trust me, the flavor is there.
For these Bacon Cheeseburgers I used ground bison meat and then melted on creamy cheddar cheese! Come to momma! Who needs a bun!?
Is bison healthier than beef?
Well, if you want to get right to it Buffalo Meat is Better Quality. Across all the different cuts, buffalo meat is lower in calories and fat than beef, and higher in protein. It’s a healthy option, that’s low in fat, calories, cholesterol and iron but still loaded with flavor.
How to cook Bison?
Bison meat is at it’s best when it’s cooked rare to medium rare to maintain the moisture and flavor of the meat. Because bison is so lean it can dry out fast. It’s actually not recommended to cook buffalo meat past medium because of this. I highly recommend using a meat thermometer so you can see the internal temperature of the burger, 145°F for medium rare. If you keep a close eye on the time and stick to that time, your bison will come out perfect every time!
How to make the BEST Bacon Cheeseburgers?
The best method for cheeseburgers is simplicity. You don’t want to over mix the meat when forming the patties or mess around with it on the grill, both of those methods reduce the flavor of the meat or dry it out!
- Preheat grill to medium high heat, approximately 375-400 degrees F.
- Form ground bison meat into four 1/4 lb. patties.
- Season with salt and pepper on both sides.
- Clean grill grates and spray with cooking spray or rub with olive oil soaked rag.
- Place burgers on the grill. Grill the first side for 4 minutes, with closed grill. Flip burger and grill the other side for 3 minutes with closed grill.
- Then, place a slice of cheese on each burger and close the grill. Let the burgers cook and cheese melt for 1 minute and remove from grill.
How many calories are in a Bacon Cheeseburger?
Typically, Bacon Cheeseburgers are 590 calories and up with 40 grams of Carbohydrates, depending on what you use. This Bacon Cheeseburger made with bison meat is only 335 calories with 2 grams of carbohydrates. So if you’re looking for a more balanced way to have a Bacon Cheeseburger but not skimp on flavor this recipe is it!
In my opinion, even though I love all the other burger recipes I have for you this week, these Bacon Cheeseburgers are by far my favorite. I mean what can get better than melted cheese and bacon! Am I right? And I didn’t even add avocado to this one. Shocker! haha Honestly, it doesn’t need it. There is so much flavor in every bite. My 16 month old devoured every bite of this!

Ingredients
- 1 lb. ground bison meat (you could also use lean ground beef 93/7)
- salt & pepper to season
- 4 slices of sharp or medium cheddar cheese (I used tillamook)
- 4 slices of bacon, cooked
- 1 head of iceberg lettuce, sliced into wedges
- 4 thick slices of vine ripe tomatoes
- 4 slices of red onion
- pickles
- condiments of your choosing: ketchup, mayo, mustard
Instructions
The Cheeseburgers (Bison Burger)
