Homemade Pumpkin Spice Granola
How do you process pain, hurt, or loss in your life?
A couple weeks ago we gathered in a park late at night, decorated lanterns and set them off to fly through the sky. We did this on Pregnancy and Infant Loss Remembrance Day. Three years ago we lost my sweet niece Zoe to SIDS and the year before that Mike and I had a miscarriage at 10 weeks.
There have been many time when we’ve talked about walking through these hardships. The one thing that always sticks with me are the words my brother in law spoke on the radio one time as they were discussed dealing with grief and how to move forward in the midst of the hurt.
He said, “We celebrate Zoe’s life, we celebrate the gift of life that God gave us for those 3 months, and we accept the gift of pain that God has given us as well because it has showed us new things about God that we would not have otherwise learned. So even though we have pain, we know that it is a gift that God has decided to give to us.”
As soon as he said that my mind started to turn. Pain as a gift?
I immediately started to think through the pain that Mike and I had been going through those 4 years we struggled with getting pregnant! Every month my heart would get hopeful that maybe this would be the month that God decides to bless us with a child and every month that was not the case.
For a while I just didn’t understand. But what I do know is that God had a plan for me and Mike that I didn’t know about. Just like he had a plan for my brother-in-law and sister-in-law. Sometimes that path is pain, heart break, and loss. Sometimes that path is success, joy, and blessing. Either way, they are gifts from God.
Why do we see the “gifts” that God gives us only as good things and not bad?
Is it not a gift that through this time of pain and waiting on a second child that I have become more dependent on God? That I have been letting go of control and realizing that my plan does not supersede His plan?
To me that is a gift, I have found comfort in the midst of sorrow. And every time someone else I knew got pregnant I just had to remind myself that God is good.
So after thinking about the comment of “pain is a gift” I now understand what my brother-in-law meant. Gifts are gifts, some are easier to accept than others. Sometimes you want to ‘return that one gift to the store’ and sometimes you want to rip open the box and play with it right away. Regardless they are all gifts!
And now my brother and sister in law have another beautiful baby girl and I am carrying one now! God is good and restores those times of pain and hurt.
Just some more thoughts that were on my mind this weekend.

Ok, so on to the recipe for today.
I am a total granola fanatic… I love to have me some yogurt and granola in the morning. In fact, it’s usually my breakfast every morning. Since I love granola and I love pumpkin why not create something with both of my favorites in it. Um… chellloo?
Homemade Pumpkin Spice Granola… OMG seriously addicted to the stuff y’all. I think I had it for breakfast, lunch, and snack all week last week! And when I like something I tend to hoard it. I noticed that Mike took some one morning and I scolded him.. bahaha. Kinda felt like Joey from Friends… “Krista doesn’t share her granola!!!”
But I figured if I need to teach my son how to “share” I should probably model it myself first, which I why I made a double batch today. One batch for me and one batch for Mike. 🙂 hehe
This Pumpkin Spice Granola takes about 5 minutes to mix up and then 30 minutes to bake. But the after product is totally amazing! It has sweetness from the maple syrup, a slight pumpkin taste {yummers!}, and then rich spice flavors from the cloves, nutmeg, allspice, and cinnamon. What more could you ask for in a granola? Nothing… it is absolutely perfect!
So go out and buy a can of pumpkin puree or make some yourself… and get this Pumpkin Spice Granola made.. pronto!
Bon Appetit!

“Gifts are gifts, some are easier to accept than others. ” really spoke to me this morning. There are some gifts I’m struggling to accept I guess. Thank you for sharing.
Absoultely, glad it encouraged you!
What a perfect healthy snack! I love the cranberries!
I’m so excited to make this at home! I love granola but it can get so expensive buying the bagged versions from the store.
Lovely post, your story is powerful and full of raw feelings. Hugs to you and your family!
I LOVE yogurt and granola for breakfast. I can’t wait to make this delicious version to enjoy!
My daughter keeps asking to make our own granola, so I can’t wait to try this!
A very touching post, Krista.
My kids love to make granola – I’m sure they will love this pumpkin spice version as well!
I love pumpkin spice granola and definitely make it all year round – so good! This looks delicious!
Thanks for a yummy granola recipe Krista! It’s a nice change from my standard, and I can totally relate to hoarding it! Made it yesterday and it filled the kitchen with the smell of Autumn – ahhhh. Taking it to a weekend getaway with 4 other couples. Keep the faith for your baby. It took us 11 years, and ultimately the help of IVF, and we are now blessed with an amazing little man of 13 months!
Thank you so much Dorothy, you are absolutely incredible and I love your strength to endure the season and then finally receive God’s blessing on the other end! So encouraging! 🙂 Hugs!
Enjoy that granola girl!
A lovely post, Krista…very touching and very true….yes, patience too is a gift. I waited a long time for my now 14 , yr. old (and also have another one after – so 14 & 11) ..and I wish you the same happiness that children bring, (although, 14yr olds put a new spin on “happiness!”) As for the pumpkin granola, going out to buy a can is not necessary….I have the shelves stocked all year! Love the Fall too! Peace!! oh ya, and …pinned!!
Thanks you so much Dayna, I so appreciate the sweet encouragement! 🙂
You are one smart lady to have pumpkin in the pantry year round, the stuff rocks and I would totally use it year round too! Thanks for the pin! Hope you have a great rest of the week!
Was on Pinterest looking for a granola recipe because I’m tired of buying crap granola and…. there you were! First let me say that your Blog touched me in so many ways. Happy, sad and just filled with the love that God gives me. I think we all have sad gifts but some people just don’t see it that way. You are just a Joyful person sweetie! Now to the Pumpkin granola….. just made my first batch and it’s the BOMB! Thanks so much for sharing. Pinned!
Oh.. you are so sweet Margaret! Just logged in tonight and saw this comment, made my night for sure.
Love that my blog touched you, that is why I write… well that and the delicious food! 🙂 That pumpkin granola for sure is the bomb!
Hi! Can you substitute honey for the maple syrup?? I can’t stand maple!!
haha.. yes you can definitely substitute honey for the maple rosie. 🙂 Hope you like it girl!
Hi Krista! I found this post today on Pinterest and it was definitely a “God thing.” We have been trying for 2 years for a second child and have had 2 miscarriages. Your message was a gift that I needed to hear today. I didn’t know how blessed I would be when I searched for granola today. Prayers for you and your family.
Oh.. so glad Stacy! We all need encouragement, I’ve talked to so many women who have had this happen to them. The more we talk about it the more it unites us together and I think healing will take place.
I will definitely be praying for you and your sweet family Stacy!
In the meantime, enjoy that granola. 🙂
Hi there just stumbled across your beautiful blog via Pinterest and I can already tell that I will be spending a lot of time on here! Quick question, can I leave the coconut oil out of the granola? I am a HUGE pumpkin fan and I want to whip some of this up asap but I don’t have any coconut oil on hand.
yeah you can totally do that. Sub it with some canola oil, the oil is just gonna act as a binder and will make it stick together. 🙂
P.S. so glad you found me too girl! Yeah for pinterest!
Fantastic! Thank you so much! 🙂
Your welcome Rebekah!
This is my first time reading your blog, and I just wanted to say that it was lovely. You and your family are very strong, and obviously loving. You are truly blessed.
I am going to whip up some of your granola this weekend. I’m thinking at least a double batch. You have to use up the can of pumpkin once you open it, right? 🙂
Thanks for sharing, both the yummy recipe, and some inspiring words about living our life gracefully.
thanks so much Chris, we are definitely blessed and have alot to be thankful for! 🙂
hope you enjoy that yummy granola as much as we did! And making a double or triple batch is a great way to use up the rest of that can. 🙂
What a well written post. I had never thought or sorrowful times in terms of being a gift, that is a very refreshing way of looking at it. On a happier note, yay pumpkin!!!! I bought some over the weekend, and I can’t wait to use it!
Thanks so much Annie, means alot! 🙂
And yeah for pumpkin is right girl! Can’t wait to see a pumpkin recipe from you!
So sorry to hear about your niece, Krista. I just can’t imagine. I’d like to think I’d have the strength to handle it as well as your sister and brother-in-law did, but I just don’t think I would. Thanks for being so honest and sharing about your struggles, too. We have a lot of friends who have struggled trying to have children and I know how hard it can be, but God has gifted many of them with children in the end — some after waiting for 5 years! Also loving the fall flavours here!
I don’t know if I could have the strength to handle it the way they did, truly inspired and challenging as I look at my own trials. Thanks so much for the sweet words of encouragement girl, means alot! 🙂
Lovely post Krista. 😀 I believe God will never give us more than we can handle. They may not always be good blessings, but they have a way of showing us what He wants us to see and learn. I wish you the best!
Thanks so much Cindy! You are absolutely right!!! 🙂
Krista, my dear sweet friend..thank you so much for sharing your heart and being so…real. I struggle with sharing too much of myself on my blog, but you’ve inspired me to be more opened as I found such comfort and strength from reading this post. Lately, I’ve really been diving into the book of Job. I’m learning that suffering comes to everyone, and that ultimately God’s in control of all situations. Like Job, I’ve spent so much time questioning the Lord and asking for justice when I should’ve been surrendering everything to Him and letting Him be in control of every aspect of my life. Now I try to focus on praying for a genuine heart relationship with the Lord. I can completely relate to the monthly highs and lows of “could I be? no not this time..” In fact, today was that low moment. My period was a week late and I’ve been so tired lately that I thought maybe! And then it came today…But like you say, this is a gift from God. Through this heartache, I learn that God alone is in control.
You and Mike are in our prayers. And seriously, the next time I go to Houston, we need to meet!! I’ll let you know ;). Love you, friend. Be strong and know that He is God.
I struggling with how much to share too, but I just realized that is who I am. I would share the same thing in person so why not share it here. I am just an open book and I truly believe as we share our story people start to relate, encouraged, or challenged and that is part of why I blog! 🙂
I had the same thing happen to me this month too, even a week late! After church this weekend I really felt like God was asking me “do you believe that I am God?” Because if I do I KNOW that he is bigger than any problem I will face. He breathed life into adam and eve so he can breathe a life into me, all he has to do is say the word! Praying for you too girl! And yes, we soooo need to meet the next time you are in town!
First – I am so sorry to hear about the passing of such a new life. That pains me beyond what I can express. I understand how it can be hard to wrap around pain as a gift. That is a difficult one. For years I wanted baby #4. For years it didn’t happen & never did happen. It took me about 5 years to come to the reality that it wasn’t in our future. Does it still make me sad – yes. But I see that there are other reasons behind it & if I look at it logically – it makes since now. LOVE & hugs my friend! The shoulder is here if you need it.
Oh – so happy to see you are a “Friends” fan – I so love & miss that show.
Yes!!!! You are so right on. Sometimes God knows exactly what I can handle even though my plan is different. Having to surrender “our ideas” of the future is the hardest. Mike and I were talking about the … what if we can’t or dont have a 2nd child… I just started to cry. 🙁 But at the end of the day I have one amazing young man who I adore.. just like you have 3!!! God is good either way! 🙂 Love you girl… hugs to you!
On the friends front, I have all 10 seasons if you want to borrow.. hehe.. we could have a friends marathon!
Krista, that is so true. Thinking of pain as a gift is not something we normally do. So glad you shared that with us today. I will keep your in-laws in my prayers as they go through this difficult times! And you as well! God will bless you and Mike with another baby!
As for this recipe, you are the granola queen 🙂
Thanks so much girl, definitely appreciate the prayers both for mike and I and our in-laws. 🙂
And heck yes to the granola queen.. hehe.. I’ll take it!
Oh yeah! I knew the flavors of fall would be upon us soon. Love the idea of pumpkin granola but can’t believe I’ve never tried it. Pinning.
Happy Monday Krista!
haha.. yup! It was coming and here it is! Yippee!! Thanks for the pin sweet girl!
Thanks for being so open, Krista. I am always surprised to hear how many people have had miscarriages. I’m so sorry. Funny things happen though and you just never know what may be right around the corner. For the granola, I’m a hoarder too. It’s a good thing we don’t have kids yet or else I may need to be more of a model parent than a selfish food lover 😉
Thanks Bri, you are so right you never know what the future holds! I know some people how chose to adopt because they can’t have kids and then they get pregnant 10 months later!!!
Yeah for granola hoarders!
you write such beautiful posts girl. I literally have the shivers right now. Pain is a gift, and it’s really hard to think of it that way, so this is truly awesome!
And, this granola? BRING ON THE PUMPKIN! Pinned!
Oh… thanks so much Taylor. That means alot girl!!!
And heck yes bring on the pumpkin!
