A nutrient packed Raspberry Mango Smoothie that will bring you to the tropics and kick start your day in the right direction!
I did it!! I didn’t break myself!
So, two years ago Mike and I went a snowboarding trip with a couple of friends of ours. It was only my second time snowboarding and Mike’s third but we were ready to power through and hit the slopes. The first day ended up with me heading down to the medical base at the bottom of the mountain with a hairline fracture in my right wrist and Mike heading down with a broken collar bone. When we both showed up at the ER, husband and wife, bandaged up all the receptionist could do was laugh. To be honest, all we could do was laugh too.
Well two years later we were ready to give it a try…. again! This time though, we thought we would try skiing … hoping and praying that injuries were not in our future!
I am happy to report that we came back with zero broken bones and our pride still in tact! Hip hip hurray!
I was definitely nervous the first time I got out there but my sister and brother in law were super patient and did a great job teaching the basics. I ended up skiing all blue courses by the last day and I didn’t fall off the ski lift once. Woot woot! (ps .. that was a huge accomplishment for me because snowboarding was a guaranteed failure dismount off the lift every time … I guess thats why I broke myself last time)
Anyways, skiing was a blast! We hope to do the same trip next year!
Now, on to todays recipe … another healthy recipe for a healthy start to the new year!
This Raspberry Mango Smoothie was inspired because … well… I needed something other than coffee to drink in the morning so smoothies it was! hehe … sometimes its as simple as that folks.
Originally this was going to be a Pomegranate Raspberry Smoothie but in some strange occurrence at the grocery store they were out of pomegranates!?!? Mangos were on sale that week, were looking mighty delicious, and sounded like the perfect side kick to tart raspberries.
This Raspberry Mango Smoothie is dairy free and sugar free. I used unsweetened almond milk here but if you don’t like the taste you could totally use coconut milk and it would be just as good. The chia seeds give this smoothie an extra nutrient kick to get your body started in the morning.
Now, mangos can kinda be a pain the tush to prep. So if you’re in a hurry I recommend getting all the ingredients together the night/day before, put them in a ziplock bag, and throw them in the freezer. Then all you have to do is put everything into the blender the morning of and viola … delicious Raspberry Mango Smoothie!
Yup… its amazing.. your welcome! 🙂
