Raspberry Peach Cobbler with Oatmeal Crumble

So, the past couple of months for the Mystery Dish I have ended up making something with the ingredients and didn’t realize it, posted the recipe, and then found myself having to come up with another one.

Well, not this month.

This month, I was on top of things.

This month I came up with the recipe like 3 days after the ingredients came out and didn’t post it until NOW!!

Our Mystery Dish host for June is Meriem from Culinary Couture Blog, if you haven’t checked her out yet you need to. She does some awesome sweet treats. In fact, the other day she made this  Homemade S’mores Pop tart that I am so gonna try. S’more Pop Tarts were one of my favorite growing up!

Anywho, back on subject. This month for the Mystery Ingredients Meriem chose Peaches, Cheddar Cheese, Green beans, Corn, Chicken, Nectarines, Butter, Pecans, Heavy cream, Pesto, and Coconut milk/cream.

The first thing I thought of when I saw those ingredients was … PEACHES! I love love love them this time of year. Sweet, juicy, and absolutely delicious.

Description

This sweet and delicious Raspberry Peach Cobbler for two is made with a crunchy oatmeal pecan crumble. It’s the perfect date night dessert recipe!


Ingredients

Scale

Raspberry Peach Crisp:

  • 5 cups fresh peaches, skinned and cut into 1/4” slices
  • 1/2 cup of fresh raspberries
  • 1/4 cup white sugar
  • 1/4 cup all purpose flour
  • juice of 1 lemon (about 1 tablespoon)
  • 1/4 teaspoon of ground cinnamon
  • 1/2 teaspoon vanilla

Oatmeal Pecan Topping:

  • 2/3 cup of rolled oats
  • 2/3 cup of all purpose flour
  • 1/2 cup of pecan, chopped
  • 2/3 cup of brown sugar
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup butter, cold and cut into small pieces
  • Optional: Vanilla Bean Ice Cream

Instructions

  1. Preheat oven at 350°F.
  2. Lightly spray a 9×9 baking dish and set aside.
  3. Add peaches, sugar, flour, lemon juice, cinnamon and vanilla in a small bowl. Toss to coat.
  4. Next, add in the raspberries and gently toss.
  5. Add raspberry peach mixture to the prepared baking dish.
  6. Add rolled oats, flour, pecans, brown sugar, cinnamon, nutmeg, salt and butter in a small bowl. Mix with a fork, mashing/cutting the butter into the dry ingredients until the the mixture is crumbly.
  7. Sprinkle the oat mixture on top of raspberry peach mixture.
  8. Bake for 40-45 minutes, until the fruit juices are bubbling over and the crisp on top is browned.
  9. Remove from the oven and let rest for 5 minutes then serve.
  10. Optional: top with vanilla ice.
