Roasted Garlic & Herb Whole Wheat Couscous
So, just in case you were wondering, making couscous with a 2 year old is not a good idea.
Normally when I’m cooking little man likes to be in the kitchen with me and serve as the sou chef. I have absolutely no problem with that, he pours things great and makes a mean scrambled eggs.
On this particular occasion, i.e. making couscous, it was a little messier than expected. I mean, all he really had to do was pour the stuff into the pot and stir. He was pouring the couscous in like a champ and then suddenly decided that, “hmmm… I think that looks like enough for the pot” and then continued to pour the rest of the 1/4 cup of couscous on the counter.
Let’s just say clean up was not fun. Do you know how small that stuff is? Very very small, it fits in the smallest of places which was not fun for cleanup. Ugh! Lesson learned!
Even though the cleanup was not fun, eating this Roasted Garlic & Herb Couscous dish was! This dish is literally done in less than 10 minutes. Couscous is very easy to make and with the additions of fresh basil and roasted garlic, it makes this dish very simple. It’s perfect to serve along side chicken, fish, or grilled vegetables.
How to Make This Easy Vegan Side Dish
To get started, bring 1 1/4 cups of water to a boil. Once boiling add 1 cup of dry whole wheat couscous, stir to combine.
Cover and immediately remove from heat. Let sit for 5-7 minutes.
In the meantime, minced 3 cloves of roasted garlic. {If you need to know how to roast garlic then check out this post, its super easy}
Also, roughly chopped 2 tablespoons of fresh basil. Once couscous is finished, fluff with a fork.
Next add in the minced roasted garlic, fresh basil, 1 1/2 tablespoons of olive oil, and season with salt and pepper. Stir everything together and serve.

Hi,
Quick question: would I be able to add sautéed garlic if I didn’t want to roast a whole bulb of garlic? I’m also thinking of adding lemon zest and hive to the recipe. I think that would brighten it up bit more too.
You could but it will probably be a little bitter and strong. Roasting the garlic makes it sweeter. But definitely give it a try and let us know how it turns out Alaysia!

Hahhah, I know what you mean. I once spilled a cup of cous cous because someone (I mean the husband) scared the pants out of me while pouring into the pot and it went everywhere. I was not happy. We eat cous cous a lot at home and I love it. Love this roasted garlic and herb version 🙂

Okay, you have seriously encouraged me to make this! I’ve never made couscous. In fact, I’ve only heard of it because of the Food Network channel. I obviously live in the wrong region… I’ve never even seen it in my local market. (But, that’s one of the main reasons I branch out and shop at another place that has foods like this.)
