I seriously can’t tell you how excited I am to be back home!
My trip to Miami for the Blogher Food Conference was such a blast. I learned TONS of tips & tricks from the food blog world while I was there and can’t wait to start putting some of those things into practice. Met a couple of great brands like Stonyfield Organic, Apple Gate, Lactaid, Go Veggie, and plenty more that I would love to work with. Met a couple of my “OMG I can’t believe that’s her” bloggers that I have been following for a while. {those are the ones that probably think I’m a creeper because I was staring at them too long… hehe.. oh well}
I also met some incredible friends while I was there. Some people I knew I was going to see… like for instance.. my awesome roommate Jen from Yummy Healthy Easy. But also a couple of others that I didn’t think I would and it was totally a God thing that I was able to spend so much time with them. I loved every second of building those friendships and can’t wait till the next conference to get together with them again! The blogging world has been one of the most unexpected blessings in my life, it truly is an awesome community!
So… back to the whole “I’m glad to be back home thing”…..
Well… while I was gone I was “under the weather”. Like… hardcore. Stomach flu is no bueno to have while you are gone. The last day of the conference I probably looked like a zombie. But the worst part was my husband flew in to Miami on Saturday so we could have a little “mommy daddy time” and both of us ended up sick. So, instead of a fun time at the beach and under the sun, it was more like a hit and miss feeling well time under the shade. Boooo…
All that to say I’m glad I’m home and in my house again to get back to normal.
Now… to clean the “wreck” that is my house and attempt to ease myself back into posting these tasty recipes for you.

As a way to ease myself back into the groove I thought I would start off with a breakfast dish! Nothing is easier than breakfast right?!? This dish is Tex-Mex inspired… I know… big shocker right! It is so stinking easy I’m almost embarrassed to share it. But… lucky for you I’m still going to.

Sausage Egg & Cheese Breakfast Tostadas! These things are literally done in less than 15 minutes and are packed with tons of flavor from the delicious all-natural gluten free Jimmy Dean Sausage that it is served with.
If your looking for a way to spice up your weekend breakfast with the family then this is it, add a little fresh Pico de Gallo and call it a morning!

Description
These healthy Breakfast Tostadas are loaded with savory eggs, melted cheese, spicy sausage, and served on crunchy corn tortillas!
Ingredients
- 8 eggs, beaten
- 4 oz. of lean all natural Jimmy Dean breakfast sausage
- 1/2 cup of shredded cheddar cheese
- 8 corn tortillas
- Pico de Gallo – optional topping {for a great recipe – click here}
Instructions
- Preheat oven to high broiler.
- Heat a medium nonstick saute pan over medium high heat.
- Add 4 oz. of all natural Jimmy Dean Breakfast Sausage.
- Break up meat and cook until browned on all sides, about 5-7 minutes.
- Add in 8 eggs that have been beaten, stir into sausage mixture. Continue to stir until all eggs have been cooked through. About 3-5 minutes.
- On a 2 baking sheets add 8 corn tortillas, evenly distribute the egg mixture and a 1/2 cup of shredded cheddar cheese.
- Place baking sheets in the oven under high broiler and bake for 2-3 minutes, until cheese is melted and tortillas are slightly browned.
- Top with fresh made Pico de Gallo and serve!
