Nutritious Shaved Brussels Sprouts Harvest Salad filled with bacon, cranberries, and goat cheese then topped with a Hard Apple Cider Vinaigrette to spice things up!
Major cravings lately, and no I’m not pregnant!
The funny thing is, my cravings are for something I would have totally never guessed.
Brussels Sprouts!
I know weird right! Last week I posted a Brussels Sprouts recipe, but honestly, after that dish all I can think about are Brussels Sprouts and Bacon. Can you blame me!?
So when Marcie from Flavor the Moments sent out the Mystery Dish ingredients for this month I was stoked! Guess what one of the ingredients was?

Well.. I’ll tell you! Brussels Sprouts! {total fist pump action going on over here}
The rest of the ingredients she chose for this month were –> pork, fennel, kabocha squash, hard apple cider, heavy cream, orange, farro, hazelnuts, quince, thyme, maple syrup, brussels sprouts.
Definitely a hard list this time around, luckily I zeroed in on the last ingredient and built my dish from there!
I always feel inspired to try new things and test out my culinary chops when its Mystery Dish time, and this time was no different.
I decided on making a Shaved Brussels Sprouts Salad … because … well .. I had never had one before and wanted one! But, I had no idea how to “shave” the Brussels Sprouts. Everything I looked up online said to use a mandolin.
Well.. I don’t have a mandolin. So… when all else fails just look on youtube! There it was in all its glory … “how to shave brussels sprouts”. Score!
It was easy peasy, just a little time consuming. All you do is cut the brussels sprout from the top to the bottom, flip the sprout so it is facing cut side down on the cutting board, and thinly slice the sprout so that it looks shaved. Viola!
Since Brussels Sprouts and Bacon went so well together last time I started my salad with those two ingredients, added in some goat cheese for a little creamy element, pecans for some crunch, dried cranberries for sweetness {plus they just seemed “fall-like” to me}, and some hardboiled eggs because well they just rock and I felt like it. 🙂
As soon as the hard apple cider vinaigrette got mixed in with all the other ingredients, I took the first bite and was immediately taken to Brussels Sprouts Salad heaven! This salad totally went beyond my biggest expectations, and Mike absolutely loved it!
On a side note, pretty sure that half my table at Thanksgiving is going to be covered in Brussels Sprouts because this salad will be on the menu too! I just can’t help myself. We might not even have Turkey … just Brussels Sprouts.

Description
Nutritious Shaved Brussels Sprouts Harvest Salad filled with bacon, cranberries, and goat cheese then topped with a Hard Apple Cider Vinaigrette to spice things up!
Ingredients
- 5 cups of shaved brussels sprouts
- 1/2 cup of pecans
- 1/2 cup of dried cranberries
- 1/2 cup of crumbled goat cheese
- 1/2 cup of crumbled crispy bacon
- 2 hardboiled eggs, diced
Hard Apple Cider Vinaigrette:
- 1/4 cup of hard apple cider
- 1 tablespoon of dijon mustard
- 1 garlic clove, minced
- 1 tablespoon of maple syrup
- 1/2 teaspoon of dry basil
- 1/3 cup of olive oil
- salt & pepper
Instructions
- In a small bowl mix, hard apple cider, dijon mustard, garlic clove, maple syrup, dry basil, salt & pepper. Slowly add in olive oil and stir until not more separation in vinaigrette. Set aside.
- In a large bowl, add shaved brussels sprouts, dried cranberries, hardboiled eggs, pecans, goat cheese, and bacon.
- Toss and then either add in dressing until just coated or serve on the side.
Notes
How to Shave Brussels Sprouts: cut the brussels sprout from the top to the bottom, flip the sprout so it is facing cut side down on the cutting board, and thinly slice the sprout so that it looks shaved.
