So… how was everyones 4th of July?

We had a blast! Loads of adults and even more kids … as in we had like 15 kids. Yes, I know crazy but it was still so much fun.

Honestly, I wouldn’t have it any other way. I think our friends that come over now just expect to have lots of people at the house. A house filled with people is a house filled with love in my opinion. Once we devoured all the food we turned on the patriotic lights in the pool, let the kids swim a little more than drug them out of the pool for some dessert and fireworks (that Mike set off in our front yard… eek) It was a blast. Pun intended.

The food scene was unreal though, and I’ll definitely will have leftover for days. Anyone want me to ship them some?

We had Wisconsin Beer Brats, Hamburger Sliders, Smoked Brisket (that a friend brought), crazy amounts of side dishes and three different desserts! I’ll be stuffed for a few days.

While all the food was amazing! Here’s my man concern. I’ve been working my butt off like crazy (as in working out to get in shape post baby) because we head to Vegas next week for a little mommy and daddy trip and well… I want to look good in a swim suit.

So high protein, good fats and low carb dinners are my jam right now.

This gluten free Shrimp Stir Fry served with zucchini noodles is the perfect way to detox from all that 4th of July food and Summer Sangria!

It’s basically all veggies … minus the shrimp.

The best part is this stir fry is done in less than 30 minutes. After I made this I kept thinking… “why the heck do I not make stir fry more often?”

They are so easy to make, are loaded with fresh ingredients and always turn out scrumptious. I need to remember this moment so I plan more stir fry meals! Subbing in zucchini noodles for rice is a great way to cut back on carbs too.

On a side note. I intentionally did not cook the zucchini noodles. I find they get to soggy if you cook them. The heat from the stir fry mixed with the raw zucchini actually cooks them a bit. It’s perfect!

25 Minute Light & Easy Shrimp Stir Fry with Zucchini Noodles a healthy high protein low carb dinner your family will love!


Ingredients

Scale

Shrimp & Veggies:

  • 1 lb. jumbo shrimp, peeled and deveined
  • 1 tablespoon sesame oil
  • 3 zucchini, spiralized
  • 1 red pepper, julienned
  • 1 cup snap peas
  • 3/4 cup grated carrots
  • 2 oz. raw cashews, roughly chopped (optional)

Stir Fry Sauce:

  • 1/4 cup tamari sauce
  • 1/3 cup water
  • 1 teaspoon ground ginger
  • 1 teaspoon spicy mustard
  • 1 tablespoons honey
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon arrowroot
  • Optional: top with sesame seeds and sliced green onions

Instructions

  1. Heat a wok or large skillet to medium high heat. Add sesame seed oil to the pan and the shrimp. About 3-4 minutes. Turning to saute each side throughout.
  2. Remove shrimp from the pan and place on a plate.
  3. Immediately add red pepper, snap peas and carrots. Stir fry for 3-4 minutes. Stirring occasionally.
  4. In the meantime, to a small bowl add tamari sauce, water, ground ginger, spicy mustard, honey, red pepper flakes and 1 tablespoon of arrowroot. Whisk to combine.
  5. Add the shrimp back to the pan with the vegetables and add the sauce into the pan. Stir everything together. Then cover for 2-3 minutes and stir fry. Once the sauce is thickened you should be ready to serve.
  6. Serve the shrimp stir fry mixture on top of the zucchini noodles. (optional: top with chopped cashews, sesame seeds and sliced green onions)
