Description
This 20-minute turkey burger with piquillo mayo and guacamole will be your new favorite summer recipe. It’s perfect for cookouts!

Southwestern Turkey Burger:
- 2lb ground turkey
- 1/4 cup almond flour
- 1/4 cup finely diced onion
- 2 tablespoons fresh cilantro, diced
- 2 teaspoons ground cumin
- 3 garlic clove, minced
- 2 egg whites
- salt & pepper
Guacamole:
- 2 avocados
- juice of one lime
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
Spicy Mayo:
- 2 roasted piquillo peppers
- 1 small chipotle peppers (from a can of chipotle peppers in adobe sauce)
- 1/2 cup mayo
- 2 teaspoons of lime juice
Other Ingredients:
- Roma Tomato, sliced
- Butter or Boston Lettuce
- 6–8 buns
Instructions
- Heat grill to medium-high heat, about 400°F.
- Add piquillo peppers, chipotle pepper, mayo, and lime juice to a food processor. Blend until smooth and the peppers are finely chopped. Set aside.
- In a small bowl add avocado, lime juice, and salt. Using a fork, gently smash the avocado – be careful not to over-smash you want it to be somewhat chunky. Set aside.
- Add ground turkey, almond flour, diced onion, fresh cilantro, ground cumin, garlic cloves, egg white, salt and pepper in a large bowl. Using your hands mix so everything is combined.
- Form ground turkey mixture into 6-8 equal patties.
- Place turkey burgers on the grill, and grill for 4-5 minutes per side. (DO NOT push the burger with your spatula it pushes all the juices out) Remove from grill and let sit.
- Place buns on the grill and toast for 1 minute. Remove from grill.
- Assemble burger – bottom bun, spicy mayo, guacamole, burger, tomato and lettuce.
- Devour!
