Spicy Roasted Tomato Guacamole
So I have officially decided that along with soup, beef, and ice cream {which melts as your photographing it}. Guacamole is super hard to make look “pretty” in a picture.
I mean really, it is mushed up green stuff and then when combined with roasted cherry tomatoes {like in this particular guacamole} there are now red seeds and swirls going through the green mushy stuff. UGhhh!!! Just when I was feeling good about my photography.
Oh well, sometimes the things that don’t always look amazeballs sure to do taste amazeballs and THIS is one of those dishes!
This Spicy Guacamole is killer! The flavor from the sweet roasted cherry tomatoes mixed with the heat from the roasted jalapeño will blow your mind. But why stop there? So I topped it off with a little citrus from lime juice AND orange juice. I know… orange juice?!? Just trust me, it adds so much to the dish and leaves people with a “whats in that guacamole” question after their finished. I topped mine with a little crumbled queso fresco, because both my boys love CHEESE. But you can totally omit it if you choose
How to Make The Best Guacamole
To get started, preheat oven to 400º. Roast 1/3 cup of cherry tomatoes and 1 whole jalepeno for 20 minutes.
Remove from oven and let sit until cool. Remove seeds from jalapeño and dice up half of the jalapeño. Set aside.
In a bowl, add roasted cherry tomatoes, diced jalapeño, 1/4 cup of diced red onions, and 1 minced garlic clove.
Mash up 4 avocados and put in bowl with the rest of the vegetables.
Add juice from 1 lime, juice from half an orange, salt and pepper. Mix together and serve! {optional: top with crumbled queso fresco}

- 1/4 cup of red onion, diced
- 1 jalapeño, roasted {only use 1/2 of it, use more if you like it spicy}
- 1 garlic clove, minced
- lime juice
- juice of half an orange
- salt & pepper
Instructions

Have you ever heard that food stylist {like food companies} used color shortening to avoid the melting ice cream mess? You did an awesome job making the green mush look amazeballs Krista!!

Really… wow totally didn’t know that about color shortening! That amazing. Some of the tricks they use are pretty cool, I’m just too lazy to do them because I’m usually serving the food right after i shoot it. 🙂

Yeah, if you keep the seeds in and use the whole jalapeno instead of half you will definitely have a hot spicy guacamole. Just be prepared with a beer or water to chase it down! 😉
Oh man, I so so so LOVE guacamole. Like, it’s one of my favorite foods. I’ve never thought of roasting cherry tomatoes and the jalapeno, and adding orange juice… so creative! Definitely going to try that. And isn’t it so super annoying when foods are hard to photograph?! You know it tastes good… you know people will love it… but then the food just doesn’t cooperate on camera! I totally feel your pain!

Just wondering, any special tips on roasting the cherry tomatoes and Jalapenos? This looks so good!
Great question, Lara. No special instructions. You could season them with a little olive oil or sea salt to add more flavor, and maybe put them on a silicone baking mat for easy cleanup. 🙂 Hope that helps girl!
