Description

This 20-minute pear walnut salad recipe with tart cherries and homemade balsamic vinaigrette is an easy holiday side.


Ingredients

Pear Walnut Salad:

  • 10oz. fresh spring mix 
  • 2 pears, sliced
  • 1/2 cup dried cherries
  • 1/2 cup walnuts, chopped
  • 1/4 cup shaved parmesan
  • 1/4 cup sliced red onion

Balsamic Vinaigrette:

  • 1 garlic clove, minced
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon dry rosemary
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • salt & pepper to taste

Instructions

  1. Make Balsamic Vinaigrette by adding all the ingredients to a small bowl. Using a whisk, stir vigorously until the dressing emulsifiers. (oil and vinegar no long separate) Set aside.
  2. To a large bowl, add spring mix, pears, cherries, walnuts, parmesan cheese and red onion. 
  3. Drizzle with dressing or serve with the dressing on the side.
