This 20-minute pear walnut salad recipe with tart cherries and homemade balsamic vinaigrette is an easy holiday side.

Pear Walnut Salad:
- 10oz. fresh spring mixÂ
- 2 pears, sliced
- 1/2 cup dried cherries
- 1/2 cup walnuts, chopped
- 1/4 cup shaved parmesan
- 1/4 cup sliced red onion
Balsamic Vinaigrette:
- 1 garlic clove, minced
- 1 tablespoon dijon mustard
- 1/2 teaspoon dry rosemary
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- salt & pepper to taste
Instructions
- Make Balsamic Vinaigrette by adding all the ingredients to a small bowl. Using a whisk, stir vigorously until the dressing emulsifiers. (oil and vinegar no long separate) Set aside.
- To a large bowl, add spring mix, pears, cherries, walnuts, parmesan cheese and red onion.Â
- Drizzle with dressing or serve with the dressing on the side.
