Dreaming is so much fun. I love planning things for the future, especially when it involves trips! Mike and I love to travel and take trips together. Our anniversary is coming up in 5 months and we have always done a trip for our anniversary. So let the searching begin.
We’ve talked about doing something different this year. Our normal go to is any place with a beach, because we are both beach and water lovers. But this year I think we’ve landed on a road trip down the Pacific Coast Highway ending in wine country.
I haven’t done a road trip in forever. Which is funny because I did them ALL the time growing up. I give my dad the hardest time about those trips still. He is a huge National Parks lover. So each year for our family vacations we went to a different park. As soon as we got to the start of the park, where they typically have the “Welcome to xxxx National Park” my dad would make me and my brother get out of the car and take a picture.
So I have a picture in front of almost every National Park sign in the US. Thanks dad!
Truth be told. I am thankful that we were able to do that and my dad was so adamant about showing us the national treasures. Even with all the cheesy photos.
Anyways. The last time I had a road trip with Mike it was at least 7 years ago. We went to Savannah, Georgia to visit Mike’s grandma who wasn’t doing very well. But instead of flying we decided to drive.
Well, on that trip I actually got pulled over twice within 12 hours. (whoops.. but one of them was ridiculous)
On the way back we decided to take a detour and make our own path through backroads instead of just using the highway. I LOVE looking at a map and connecting the “dots” or roads to get to a certain destination and that is exactly what we did. It was a blast! So I really am looking forward to this trip! But also sad/nervous to leave Maddie. Even though I know it will be good to get away and have some mommy & daddy time and it will also be good for her to have some grandparent time.
We’re also trying to plan a Disney Trip this year. Probably sometime late fall.
So fun!
Ok, now moving on to something else exciting. Iced Coffee!
I know right now a lot of the US has snow on the ground, but down here in Texas we have sunny skies. It’s not quite as blistering hot as it is in the summer, thank goodness, but it is still warm none the less. Which means it’s time to whip out the iced coffee.
How to Make Cold Brew Ice Coffee – Just Like Starbucks
One of our favorite things to get in the summer is the Sweet Cream Cold Brew at Starbucks.
It has the bold coffee taste from the espresso and then a nice sweet creamy finish from their sweet cream. Plus it’s low on calories. Since Mike and I drink it non-stop during the summer I decided to recreate it at home.
The key to a good cold brew or iced coffee is coarse coffee grounds. On average you use about 1 cup of coarse coffee grounds for every 3-4 cups of water and let is steep overnight. In this recipe I used 4 cups of water, but you could use 3 if you like it stronger.
So what’s the reason for coarse grounds? Coarse grounds allow for maximum flavor extraction of the bean because there is more surface area for the water to work with. It’s also important for the filtering process. In order to actually drink the iced coffee you have to filter it after it steeps overnight. It’s much easier to strain if the grounds are coarse than if they are fine.
Once all that’s done, all you have to do is make the sweet cream and voila. The best Iced Coffee you’ll ever have with a delicious creamy Sweet Cream! Bon Appetit friends, I hope you enjoy this tasty change up in the morning!

Description
This iced coffee recipe is quick, easy & budget-friendly too! With a sweet cream finish, it tastes better than drinks from a gourmet coffee shop.
Ingredients
- 8 cups of water
- 2 cups of coarse ground coffee
Sweet Cream:
- 4 oz. sweetened condensed milk
- 6 oz. 2% evaporated milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Instructions
- To a large pitcher add water and coarse ground coffee. Stir to mix the grounds in with the water. Cover and let coffee sit overnight or for 12 hours.
- Then pour mixture through a coffee filter or cheesecloth to strain the grounds from the mixture, so you are left with a pure clean cold brewed coffee.
- Next to a small bowl, add sweetened condensed milk, evaporated milk, vanilla extract and cinnamon. Whisk to combine everything and refrigerator.
- Store both the cold brew and sweet cream in refrigerator and serve as desired.
- Note: I usually add about 1 -2 tablespoons of sweet cream to 8-10 oz. of cold brew.
