Today is a good day!
For one, you are getting another delicious, crazy easy AND healthy meal. Woot Woot … happy dance with fist pumping!
AND I’m sharing some photos from the Pirate Party we threw for little man a couple weeks ago!
So for whatever reason Houston, has decided to act like Seattle the past two weeks and rain like there’s no tomorrow.
The morning of the party it was absolutely beautiful! Blue skies, sun shining down, dry ground – I was pumped because they had been predicting rain all week. Things were looking good.
Party time came around and of course the rain started to come. Luckily it was just a mild drizzle so nothing too bad.
I had a couple of outdoor games planned for the kiddos to play – after all it was a pirate party!
We had “walk the plank” which was a zip zag plank that went over a blow up pool filled with water. Captains Target Practice, where they had to fill up nerf guns with water and shoot at balloons. A “blue lagoon” which was a blue trampoline for them to jump around on. Skully’s Tattoo Parlor (for those of you wondering … I was Skully the tattoo artist) where the kids could get Jake the Pirate tattoos. Skully’s was a happening joint at the party! And then to finish up we had a treasure chest piñata. Because every party needs a piñata filled with candy!
The kids were having a blast. We started off having them walk the plank, and at one point Cason decided that he didn’t want to walk across the plank anymore so he just hopped into the pool of water! Which of course led everyone else to follow – because thats what kids do.
I decided it was time to move on to the Captain’s Target Practice which turned into Cason shooting people! haha
As a way for me to keep the peace and distract him from shooting other kids I joined the action. And Cason had a new target to aim at, which he rarely missed! Unlucky for me! Little man soaked me! Stinker! Luckily my brother came in to my defense and started shooting Cason back! 🙂
After the games we went inside to dry off and devour some Pirate Food and cake! Overall the party was a success and Cason had so much fun playing with all his friends. I loved being able to capture some of the sweet expressions of utter joy on his face as he was playing around!
I can’t believe my baby boy is three!!! Stop growing!
Ok, so the now on to the other “good” part of today! This Thai Chili Chicken Pizza with Cauliflower Crust, have you made my cauliflower crust yet? If not you need to, it will totally surprise you. I personally think it has more flavor in it then regular pizza dough and adds so much more to a dish!
The cauliflower crust combined with the Sweet Spicy Thai Ginger Sauce is amazing! But I didn’t stop there I add fresh pineapple, chicken, crunchy red bell peppers, green onions and shredded mozzarella!
If you are looking for something different to make than just the regular Deluxe pizza or BBQ Chicken then you will absolutely love this dish. The flavors all meld together perfectly and the different textures in this pizza keep your mind guessing what your going to taste next. Its incredible!

Description
A Thai Chili Chicken Pizza Recipe with Cauliflower Crust, topped with a Sweet Spicy Thai Chili Sauce. This easy gluten free pizza will be on your table in 25 minutes!
Ingredients
- Cauliflower Crust
- 1 cooked chicken breast, diced
- 1/3 cup of diced red pepper
- 1/3 cup of diced fresh pineapple
- 1/4 cup of diced green onions
- 1 1/2 cup of shredded mozzarella
Thai Chili Sauce:
- 1/4 cup of rice vinegar
- 1/4 cup of water
- 2 1/2 tablespoons of honey
- 1/2 teaspoon of fresh grated ginger
- 1 teaspoon of minced garlic clove
- 1/2 teaspoon of chili sauce (find it in the asian food section, not heinz)
- 1/2 teaspoon of arrowroot
Instructions
- Make Cauliflower Crust and leave on greased parchment paper lined baking sheet.
- Preheat oven to 450.
- In a small sauce pot, add rice vinegar and water to pot and bring to a boil.
- Next add honey, ginger, garlic clove, and chili sauce. Simmer for 5 minutes.
- Add in the arrowroot, whisk until it is dissolved and the sauce starts to thicken. Remove from the heat.
- To the cauliflower crust add, thai chili sauce, chicken, pineapple, red pepper, green onion, and cheese.
- Bake for 10 minutes, until cheese is melted.
