Thai Mango Avocado Salad Recipe
A couple of weeks ago I hosted my first ever monthly dinner club with some girlfriends. I have always wanted to have a standing date once a month where some of my friends and I gather together cook, eat together (and drink wine), share our stories, and walk through this crazy thing called life encouraging each other along the way.
Well, it finally happened. And I couldn’t be more excited!
I envisioned each of us bringing a dish, then whoever is hosting making the main entree. However, we changed that up a bit because all my ladies wanted to learn more about healthy eating and cooking. Soo… I’m kinda doing a make shift cooking class with this group. I come up with the recipes, buy the ingredients, and teach a few things while we all cook the dishes together.
For the first one I made this Thai Coconut Curry Shrimp Noodle Bowls by How Sweet Eats… mainly cuz I’m addicted to the stuff. But I felt like we needed to have something to go with it. I wanted something light that had a lot of the same flavor elements. The first thing that popped into my head was a mango salad, which is actually todays recipe.
I had an idea of what I wanted to add to the salad but nothing set in stone. Some of my best recipes, are the ones I totally just wing. The trick is remembering what I put in it! Originally I wasn’t going to put this on the blog. But it was so good and devoured in seconds that I decided to remake it to photograph it so ya’ll could feast on it’s deliciousness!
Why I Love This Salad Recipe
This Thai Mango Avocado Salad is incredibly light and easy to make. It only has 10 ingredients, but you would never guess that based on the flavor explosion in your mouth. I’m seriously in love with Mango after making this salad, in fact, I’ve literally bought Mango every week after making this salad.

Description
This Thai Mango Avocado Salad is an easy salad recipe that’s perfect for the summer! It’s filled with fresh mango, red pepper, avocado, and a light sesame vinaigrette to bring everything together!
Ingredients
- 1 large mango, julienned
- 1 red pepper, julienned
- 1 avocado, diced
- 1/4 cup diced cashews, roasted and unsalted
- 1/4 cup diced fresh cilantro
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1/2 tablespoon tamari (or 1 tablespoon of soy sauce)
- 1 teaspoon sriracha
Instructions
- In a small bowl, add lime juice, sesame oil, maple syrup, tamari, and sriracha. Using a whisk, stir until combined and oil no longer separates. Set aside.
- To a medium bowl, add mango, red pepper, avocado, cashews, and fresh cilantro. Pour the sauce over the mango salad and gently toss using two spoons.
- Serve immediately,
