A Fresh Marinated Tomato Salad made with ripe cherry tomatoes, red wine vinegar, onions and fresh herbs for the perfect summery bite. The best summer staple – it’s great on its own, as an appetizer or topper for chicken, bread or salad!Â
Ingredients

- 4 cups of cherry tomatoes, halved
- 3 tablespoons red onion, finely diced
- 1 clove garlic, minced
- 3 tablespoons fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- salt to taste
Instructions
- Add tomatoes, onions and fresh herbs to a medium bowl. Toss to mix everything together.
- To a small bowl, red wine vinegar, olive oil and salt. Whisk together until smooth. Pour mixture over tomato mixture.
- Cover and store in the refrigerator. Let sit for at least 10 minutes for all the flavors to soak together. Better if overnight.
- Serve.
