- 8 strips of turkey bacon, thinly sliced
- 1 T. of coconut oil
- 1 1/2 cup of fresh spinach
- 1/4 cup chives, chopped
- 3 oz. goat cheese, crumbled
- 8 eggs
- 1/2 cup of 2% milk
Instructions
- Heat medium sized oven safe skillet to medium high heat.
- Slice turkey bacon into thin strips.
- Add cocount oil and turkey bacon slices to pan. Saute until crispy.
- Then add fresh spinach.
- Saute until cooked down.
- In a separate bowl, whisk eggs and milk.
- Add milk mixture to turkey pan.
- Stir ingredients together and let sit for 4 minutes. Top with crumbled goat cheese and chopped chives.
- Put pan in 350° oven for 10-12 minutes, or until frittata has set. {if you shake the pan, the eggs do not move}.
- Slide frittata out of pan onto a cutting board and serve!
