One of my husbands all time favorite desserts is Panna Cotta.
He’s not really a “sweets” kinda guy. He’s more savory. Even with his regular food, he’d rather have something in a salty marinade than with sweet balsamic vinegar.
Have you had Panna Cotta before?
It’s an Italian dessert. It kinda has the texture of a custard. It’s typically made with a cream and then gelatin is added to thicken it up. Then you place it in a container and refrigerate it. The result is smooth, creamy luscious Panna Cotta. What I love about this dessert is it is super flexible. You can add different flavorings to the Panna Cotta mixture – like key lime, chocolate or coffee, or you can top it with your favorite ingredients. (although I usually prefer fresh fruit) It comes out delicious every time.
It’s literally one of those “you can’t screw this up” recipes.
Because our family usually eats dairy free, more by choice not by necessity, I make my panna cotta with coconut milk.
BUTTTTT….
The key is getting the coconut milk from the CAN. I repeat. Do not use the coconut milk in the box, it’s usually watered down. You want the cream part of the coconut milk, and the can is what gets you that cream. I usually find mine in the asian food or international aisle. Believe me, as soon as you open the can and pour it out you’ll see what I’m talking about. HUGE difference!
If you want that creamy texture and your Panna Cotta to set …. Follow the ingredients and directions. Ok. Rant over.
Honestly, besides the coconut milk the only other ingredients in this are honey, vanilla bean paste and the gelatin. That’s less than 5 ingredients people! You can’t beat that!
This dessert is super light and refreshing for the summer months. It almost doesn’t feel like dessert, that’s what I like about it the most. Well, that and you can make it look super fancy and impress your guests with this dish. But little do they know how long it actually took you to make, how much you spent on it and how secretly healthy it is.
The flavor of this Vanilla Bean Panna Cotta is incredible with little specks of vanilla bean throughout. It is so creamy with a hint of sweet you’ll fall in love. I can’t wait to hear what you guys think.

Description
Creamy Paleo Vanilla Bean Panna Cotta sweetened with honey. A quick and easy dessert recipe that takes minutes to make! It’s the perfect light sweet treat for the summer!
Ingredients
- 2 cups of full fat Thai Kitchen coconut milk (from the can), use the cream part that is on the top not the water on the bottom
- 1½ teaspoon of unflavored gelatin
- 1 teaspoon of vanilla
- 2 tablespoons + 2 teaspoons of raw honey
- 1/2 cup chopped fresh strawberries
Instructions
- Add 1 cup of coconut milk to a medium saucepan along with unflavored gelatin.
- Let sit with heat off for about 10 minutes, until the gelatin starts to become soft.
- Heat saucepan to medium high heat, add remaining 1 cup of coconut milk and honey. Whisk together until ingredients are dissolved, about 4-7 minutes..
- Remove pan from heat and whisk in vanilla extract.
- Let panna cotta sit for 10 minutes to cool down.
- Pour coconut mixture into 4-6 serving dishes.
- Cover each dish with plastic wrap, making sure wrap does not touch the coconut mixture. Store in refrigerator for 5 hours or until panna cotta has set.
- Top each panna cotta with chopped fresh strawberries
- Devour!
