- 2 english muffins {4 halves}
- 4 oz. of goat cheese
- 1 roma tomato, sliced {8 slices}
- 1 avocado, sliced
- 4 poached eggs
Instructions
- Toast english muffins to your desired liking.
- Spread goat cheese across each english muffin half.
- Top with each english muffin half with 2 slices of tomato.
- Slice avocado into long strips and distribute evenly on each english muffin half.
- Poach 4 eggs. {for directions on how to poach an egg check out my last post}.
- Top each english muffin with 1 poached egg.
- Enjoy the deliciousness!
