Wondering what to eat for breakfast? This Vegetarian Eggs Benedict Recipe is the perfect pick me up! It’s an eggs benedict variation loaded with veggies and complimented with a creamy goat cheese.


Ingredients

Scale
  • 2 english muffins {4 halves}
  • 4 oz. of goat cheese
  • 1 roma tomato, sliced {8 slices}
  • 1 avocado, sliced
  • 4 poached eggs

Instructions

  1. Toast english muffins to your desired liking.
  2. Spread goat cheese across each english muffin half.
  3. Top with each english muffin half with 2 slices of tomato.
  4. Slice avocado into long strips and distribute evenly on each english muffin half.

  6. Top each english muffin with 1 poached egg.
  7. Enjoy the deliciousness!
