Description

Waldorf chicken salad is all about contrasts: crispy, crunchy, and creamy textures, and sweet, savory, and tangy flavors. Perfect for lunches, picnics, or even a light dinner, this recipe is super easy and delicious too!


Ingredients

  • 3 cups of shredded cooked chicken breast
  • 1/3 cup diced red onion
  • 1/3 cup diced celery
  • 1/2 cup halved red grapes
  • 1/3 cup chopped walnuts
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  •  

Instructions

  1. To a large bowl add, shredded chicken, red onion, celery, red grapes, walnuts, basil, smoked paprika, garlic powder, salt and pepper.
  2. To a small bowl add, mayonnaise, lemon juice and dijon mustard. Whisk together.
  3. Pour wet mixture over the chicken salad mixture and toss to coat everything.
  4. Store in an air tight container in the refrigerator or serve.
