Easy Watermelon Feta Bruschetta Recipe
It’s been a while since my Balsamic Reduction obsession has come out … but it feels like summer to me after spending the day at the pool with Cason.
So gosh darnit … I’m bringing back the Reduction!
If you haven’t had Balsamic Reduction before you are missing out!
It’s incredibly easy to make with only ONE INGREDIENT … Balsamic Vinegar. However, I will say… invest in a good balsamic vinegar. It makes a world of difference. You will end up with a thicker, more flavorful reduction when you use a good vinegar.

Something that goes perfect with Balsamic Reduction is Bruschetta! They are two peas in a pod … meant for each other.
How to Make Watermelon Feta Bruschetta
Instead of doing the same old bruschetta I pulled a change up on ya. I mixed up all the ingredients and put it on a skewer. These are seriously going to be PERFECT for summer – it’s great for a grab and go appetizer at a Backyard Party or just something refreshing and light to munch on poolside!
This Watermelon Feta Bruschetta comes together in less than 10 minutes! All you do is alternate watermelon, feta cheese, and cucumber on a skewer and top it with “syrup of the gods” (aka Balsamic reduction) and then scatter a few fresh mint leaves around.
To say this is a good bite is an understatement!
You have no excuse NOT to make this!

Ingredients
- 1 block of feta, cut into 16 cubes
- 1 cucumber, cut into 16 cubes
- 16 watermelon cubes, 1-1 1/2″ in size
- 2 tablespoons of fresh mint, diced
- balsamic reduction
Instructions
- Place one cube of feta, watermelon, and cucumber on a skewer.
- Drizzle with balsamic reduction and fresh mint.
- Serve
