Add the bacon to a large skillet over medium heat. Let it cook until crispy.
Add the sweet potatoes to the skillet. Let them cook for 5-7 minutes.
Add red onion, pepper, paprika, & salt to skillet. Stir well & sautée for 3-5 minutes.
Return bacon to the skillet & stir to combine. Pop into the oven for 10 mins.
Make 6 wells in the potato mixture and add an egg to each one. Cook eggs to your desired doneness.
Remove the skillet from the oven. Add sliced avocados and chives on top. Serve and enjoy.
