Finely chop the garlic. Add mayo, basil, lemon juice, salt & pepper to a food processor. Process until smooth.
Use your hands to form six 1/3 pound patties. Season them with salt and pepper to taste on all sides.
Spray grill grates with cooking spray. Grill patties for 4-5 minutes on each side.
During the last minute of grilling, add one slice of gouda on top of each burger. Next, toast buns on grill.
Spread the inside of the buns with basil pesto aioli. Top it with arugula, one patty, sun-dried tomatoes, and slice of prosciutto, and the top bun. Enjoy!
