Description
These Whole Wheat Lemon Blueberry Waffles are filled with juicy blueberries and fresh lemon zest. They’re a great breakfast or brunch that your whole family will love!
Ingredients

- 1 cup of all purpose flour
- 1 cup of whole wheat flour
- 1 1/2 cups of 2% milk
- 2 eggs, separated
- 1 teaspoon of vanilla extract
- 3/4 teaspoon of almond extract
- 3 tablespoons of sugar
- zest of one lemon
- 2 teaspoons of baking powder
- 1/4 teaspoon of fine sea salt
- 1 stick unsalted butter, melted
- 1/2 cup of fresh blueberries
- PAM for spraying
Instructions
- Preheat waffle maker, and spray griddle with PAM cooking spray.
- In a medium bowl, beat egg whites using a hand mixer until soft fluffy peaks form. {the egg whites will slightly stick to the whisk when you pull it away} Set aside.
- In a large bowl, mix egg yolks, sugar, vanilla extract, almond extract, lemon zest, and milk.
- Add in dry ingredients, all purpose flour, whole wheat flour, baking powder, and sea salt. Mix until dry ingredients are mixed with wet ingredients.
- Fold in the melted butter, fresh blueberries, and fluffy egg whites until completely mixed.
- Pour in 1/2-3/4 cup of batter into greased waffle maker and cook until golden brown, about 3-4 minutes.
- Serve with fresh blueberries and maple syrup or honey.
