Well, I finally couldn’t take it anymore. {pinterest all your yummy waffle pictures did me in.. you are to blame for my spending}!

A while back, when Mike and I went to Arizona, my sweet sister in law made us these amazing oatmeal waffles. They are so light and airy, and have a little dash of cinnamon in them. I have been dreaming of them since, now that I have a waffle maker it was game on! I didn’t have the recipe so I tried to improvise and make my own version.

I could so picture eating this at a bed & breakfast one morning. A cup of coffee, a cool texas morning breeze {hey, I can dream}, silence, and these waffles… pure bliss!

Why I Love This Healthy Breakfast Option

This Whole Wheat Oatmeal Waffle recipe is perfect. It is crunchy on the outside and moist and light on the inside. Paired with the homemade Strawberry compote made with fresh vanilla bean and lemon zest, it is absolutely delicious. And if you put a little dab of whipped cream on top .. don’t worry .. I won’t judge you. In fact, I may join in. After all, whats the fun of eating healthy if you can’t have an occasional sweet treat! Right?!?

Using the Waffle Maker for the first time was a blast too, Cason and I were waiting intently for the green light to come on and let us know the waffles were done! 🙂 Great Saturday morning breakfast time with the family and so easy have the kiddos help out with the cooking process!

Whole Wheat Oatmeal Waffles with Strawberry Vanilla Compote

Description

These Whole Wheat Oatmeal Waffles are a delicious start to the morning, and they’re perfectly complemented with a fresh strawberry vanilla bean compote.


Ingredients

Scale

Whole Wheat Oatmeal Waffles:

  • 1 1/2 cup of white whole wheat flour
  • 1 cup of quick cooking oats
  • 3 teaspoons of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of salt
  • 2 eggs, lightly beaten
  • 1 1/2 cups of milk
  • 6 tablespoons of coconut oil, melted
  • 2 tablespoons of brown sugar

Strawberry Vanilla Compote:

  • 16 oz. of strawberries, quartered
  • 1/4 cup of water
  • 1/4 cup of raw sugar
  • zest from 1 lemon
  • juice from 1 lemon
  • vanilla bean from 1 Madagascar Vanilla Stalk
  • 1 tablespoon of arrowroot

Instructions

  1. In a small saucepan, over medium high heat add water, raw sugar, lemon juice, lemon zest, vanilla bean, and arrowroot. Use a whisk to blend together.
  2. Next add strawberries and bring to a simmer.
  3. Simmer for 5 minutes or until the strawberries are softened and the sauce has thicken. Set aside.
  4. In a large bowl, add white whole wheat flour, oats, baking powder, cinnamon, nutmeg, and salt.
  5. In a small bowl mix together eggs, milk, coconut oil, and brown sugar.
  6. Slowly add in the wet mixture to the dry mixture. Stir until combined.
  7. Pour batter into waffle maker {spray with cooking spray if the waffles are sticking}
  8. Close lid and cook until done. Should be crisp and browned on the outside.
  9. Serve waffles with strawberry vanilla compote on top.

  1. These waffles are fantastic! Not only are they healthy, but they taste great too. The oatmeal gives these waffles a nice chew. I do like the waffle base to be a little bit sweeter, so I’ll always add a little more sugar. You absolutely have to make the strawberry compote too!

    My mom would go gaga over these! She loves waffles topped with any sort of strawberry compote on top… loving the addition of vanilla! These must taste incredible!!!

    1. Oh the Madagascar vanilla bean was totally amazing in the compote. These may be happening again this weekend! So good, and any excuse to use my waffle maker! 🙂

    Where do you live in Texas? I can’t tell you how many times I’d look outside, think it looks beautiful and want to sit outside. I’d only last a few minutes. I love it down by the coast where you get a nice gulf breezes. They also help keep the bugs away. 😀

      We leave about an hour and a half from the coast, so its basically just hot. NO breeze. 🙁 But I still love it!
