Description
These Oatmeal Waffles are a delicious start to the morning, and they’re perfectly complemented with a fresh strawberry vanilla bean compote.
Ingredients

Oatmeal Waffles:
- 1 1/2 cup of white whole wheat flour (or all purpose)
- 1 cup of quick cooking oats
- 3 teaspoons of baking powder
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of salt
- 2 eggs, lightly beaten
- 1 1/2 cups of milk
- 6 tablespoons of coconut oil, melted
- 2 tablespoons of brown sugar
Strawberry Vanilla Compote:
- 16 oz. of strawberries, quartered
- 1/4 cup of water
- 1/4 cup of raw sugar
- zest from 1 lemon (1 teaspoons)
- juice from 1 lemon (2 tablespoons)
- 1 Madagascar Vanilla Bean Stalk, remove the vanilla beans from the stalk
- 1 tablespoon of arrowroot
Instructions
Strawberry Compote:Â
- In a small saucepan, over medium high heat add water,sugar, lemon juice, lemon zest, vanilla bean, and arrowroot. Use a whisk to blend together.
- Next, add strawberries and bring to a simmer.
- Simmer for 5 minutes or until the strawberries are softened and the sauce has thickened. Set aside.
Oatmeal Waffles:Â
- In a large bowl, add flour, oats, baking powder, cinnamon, nutmeg, and salt.
- In a small bowl mix together eggs, milk, coconut oil, and brown sugar.
- Slowly add in the wet mixture to the dry mixture. Stir until combined.
- Pour batter into waffle maker {spray with cooking spray if the waffles are sticking}
- Close lid and cook until done. It should be crisp and browned on the outside, tender on the insdie.
- Serve waffles with strawberry vanilla compote on top.
- Optional: garnish with a dollop of whipped cream
