Description
Seasoned with rosemary, thyme, and lots of garlic, this Whole30 Garlic Butter Steak and Potato Skillet comes together in just under 30 minutes! Cubes of sirloin are seared in ghee and garlic, while new potatoes are tossed with fresh herbs for a savory, filling, and easy weeknight dinner.

- 1 lb. new potatoes, halved
- 1 tablespoon rosemary, chopped
- 1 tablespoon fresh thyme
- 5 cloves of garlic, minced
- 2 tablespoons ghee
- 1.5 lbs. top sirloin, cut into 1” cubes
- salt & pepper to season
- garnish: chopped parsley
Instructions
- To a small bowl, add halved new potatoes, rosemary, thyme and 3 cloves of minced garlic. Season with salt and pepper. Toss and set aside.
- Generously season steak cubes with salt and pepper.
- Heat a large skillet to medium-high heat. Add 1 tablespoon of ghee to the pan along with 2 cloves of minced garlic. Immediately add the seasoned steak and sear both sides of each cube for 3 minutes. Remove the steak from the pan and set it on a plate to rest.
- Reduce the heat to medium, to the same pan add a tablespoon of ghee as well as the entire bowl of prepared potatoes. Saute potatoes until browned and cooked through around 10-15 minutes. Stirring the potatoes occasionally so as not to burn them.
- Once the potatoes are cooked, add the steak back to the pan and stir everything together. Cook the another 1-2 minutes and serve. Garnish with chopped parsley
